They were heated very gradually for varying lengths of time, depending upon the character of the food. He obtained a temperature of from 190 to 200 F. (88 to 94 C.) in the center of his bottles, the maximum being 212 F. (100 He used glass exclusively, and achieved results which are difficult to surpass with all our modern equipment. In 1807, a Mr. Saddington in England described a method of preserving, the essential features of which were that the fruits be placed in glass bottles, loosely corked, put in a water bath at 165 F. (65 C.) for 1 hour, then boiling water added to cover the fruit, the corks driven in, and the bottles laid on their sides to swell the corks. He did not claim to be the originator of the method, and it is believed that the general principles were obtained by him while traveling in France. At that time the cities were small, and fruits and vegetables Of all kinds were grown in their immediate vicinity and delivered fresh by wagon. There was not the same demand for something out of season or from other lands that has developed later, and aside from this, living conditions were not such as to compel the use of foods in concentrated form and free from waste. It was not until the close Of the following decade, the period of the Civil War, that the superiority of canned foods over those which were dried, salted, and pickled became common knowledge. The soldiers m detention camps and hospitals, though meagerly supplied with canned foods, learned of their excellence and value and later carried the inf orma tion to every section. Subsequent to this period domestic and commer cial canning increased constantly, though somewhat slowly, because of.a newly acquired popular prejudice that had to be broken down, and, in addition, economical methods of manufacture had to be developed. At the present time the United States is not only the largest producer of canned foods in the world, but likewise the largest consumer. The industry has been developed upon the principle that the foods go to the consumer in the most attractive and palatable form, are convenient for holding in any place and for a reasonable time, and being sterile are therefore always safe. In addition to these facts, all waste and cost Of preliminary preparation are eliminated. The foods packed are no longer limited to delicacies, to fruits or vegetables to extend their use out of season, or to marine products to make them available to the interior of the country, but the method has been extended to the packing of thousands of tons of such articles as hominy, white and kidney beans, kraut, and sweet potatoes, foods which are cheap and which have prem Ously been sold in bulk. Millions Of tins of milk are being packed because it is recognized that the canned milk is safer than that of the average fresh delivery, and a like quantity of soup is packed because it is possible to get better material in large quantities at the factories than in the small amounts made in the home. The great factor behind all Of this is economy to the consumer. Canning contributes further to a wider range in the dietary than woultl otherwise be possible, and thus has stimulated a desire for foreign products to the extent that we have become large importers. It also makes available the preparations of skilled chefs in homes where crude cookery would otherwise prevail. Lyman Underwood, of Bos ton, Mass, who are the pioneers in bacterial research as relating to canned goods and to whom the canners of the United States owe a debt of gratitude if nothing more. A sort of strange coincidence is connected with the first investigation into the causes which developed sour corn and which had proved a serious menace to the packers of that article. Mr. \v. Lyman Underwood is a member of the firm of \vm. Underwood Co, of Boston, which firm, with other articles of food, is a heavy packer of lobsters, which from an early date gave much trouble and anxiety to the packer by frequently turning black in the can. After various reasonings and experiments, all of which resulted unsatisfactorily. Mr. Un derwood decided to make a thorough scientific study of the ques tion, and, under the advice and leadership of Professor S. C. Prescott, entered into an exhaustive research and investigation of the bacteria af feeling lobster. As Nlr. Underwood pursued his studies he became enthused with the work. And. Together with Professor Prescott. Continued his investigations in other lines of canned goods, chiefly corn, and later on peas. Eastern canners first became aware of the scientific work being done by these gentlemen and naturally became very much interested and even anxious to learn the results of these pioneer investigations into the almost unknown ground of bacteria as relating to canned goods. It is a remark able fact that up to the time of these investigations by Professors Prescott and Underwood the art of canning was a dense and tangled underbrushof theories, hedged about by mysterious nods and winks; factories were jealously guarded as if they contained some enchanted secret and it was almost as difficult to secure admission as it was to break into the-vaults of a bank. All this arose from carefully guarded ignorance on the part of the canner and his desire to protect what little information he possessed re garding the process of canning. The canner himself really knew so little about the science of canning that he was compelled through caution to throw the glamour of secrecy over nearly every movement in order to pro teet himself and his lack of skillful knowledge. Canning seemed more like an intrigue than a legitimate commercial business; the act of self interest which brought Mr. Underwood and Professor Prescott together was really the first attempt ever made to place the canning business on a safe and solid basis of action.
