Book excerpt: Brazil is the fourth largest country in milk production with numerous small scale family farms. During the last three decades many transformations were in place that includes price regulation, dairy policies and international competition on the entire supply chain. Understanding how the dairy sector reacts to exogenous shocks and policy changes is of interest. This research aims to analyze economic consequences of exogenous shocks and policy changes in the Brazilian dairy sector. Impacts of changes in gross domestic product, subsidized interest rate, milk price support, renewable fuel standard requirement in the United States, and sugar cane acreage in Brazil on the entire sector is considered for a 10-year forecasts ending in 2022. A structural econometric model of the Brazilian dairy sector is used to analyze the consequences of changes in policies and other variables of interest on the production, consumption, and milk prices. A stochastic approach is also developed that incorporates risk into the model. Data from 1980 to 2012 are used to estimate the system of equations. Annual equilibrium prices are solved by minimizing the squared difference between supply and demand for four different markets: cheese, butter, milk powder, and fresh dairy products. This is the first model developed for the Brazilian dairy sector that allows for policy analysis. The findings suggest that the sector is not very responsive to changes in exogenous variables. Shocks from the demand side appear to have greater impacts on milk prices and production than shocks from the supply side. Contributions to the agricultural economic literature, policy makers, private companies, and future researches are expected. Holstein cattle populations were studies using firstlactation 305-d ME milk and fat records of 29,413 daughters of 705 sires in Brazil and 726,932 daughters of 701 sires in the U.S.A. There were 358 sires with daughter records in both countries. Data sets consisted of all herds and low and high herds stratified by within-year standar deviation for milk (HYSD) computed within counthin country. Components of (co) variance, heritability, and genetic correlations for milk and fat yields were estimated using three data groupings: all, low and high HYDS data sets form within-country and between-country bivariete and multivariate analyses, simutaneous milk and fat yields in both countries. A sire model was solved with a restricted Maximum Likelihood (REML) derivative-free algorithm. Heritabilies for milk and fat yields using all the data were smaller in Brazil (.26 and .23) than in the in the U.S.A. (.33 and .36). Genetic correlations between milk and fat were .79 in Brazil and .62 in the U.S.A. Sire and residual variances for milk yield in Brazil were 59% and 81% (all herds), 51% and 58% (low HYSD herds), and 59% and 101% (high HYSD herds) as large as those obtained for all the U.S.A. data. corresponding percentage values for fat yield were 39% and 65%, and 48%, and 41 and 80%, respectively. Genetic correlations obtained from biavariate analyses between countries ranged from .79 to .87 for milk yield and were .89 or .90 for fat yield. Parameter estimates using all data for bibariate and multivariate analyses were essentially the same. Correlated response from sire selection using the U.S.A. information increased with average HYSD Brazil: daughter response was greatest (.77 kg/kg for milk yield and .63 kg/kg for fat yield) based on information from U.S.A. half-sisters in low HYSD herds. Unequal daughter responses from unequal genetic (co) variances under restrictive Brazilian conditions support the presence of an interaction between genetype and environment, which affects the yield expectation of daughters of U.S.A. sires performing in Brazilian herd enrironments.

Book excerpt: 800x600 This case study examines unique supply chain challenges faced by a Brazilian dairy cooperative based on values of self-help, self-responsibility, democracy, equality, equity, and solidarity. It maps the co-op’s supply chain, identifies its primary members, introduces a transaction cost strategy for improving efficiency, and illuminates managers' concerns about this approach. Focusing on realistic issues and challenges throughout, it offers exceptional value to both students and practitioners. Book excerpt: This paper analyzes the cause-effect relation between national milk supply and the price paid to Brazilian producers. It also seeks to model the expected returns on a monthly basis for the price of milk paid to producers in Brazil. Logarithmic returns of domestic supply and price of milk are used to perform cointegration and causality tests, followed by modeling to predict the future price of milk in Brazil. The results suggest that although the variables are not cointegrated, there is a causal flow running from national milk supply to domestic price of milk, while the causal flow in the reverse direction is far less expressive. Finally, the relative predictability for the price of milk is specially focused through autoregressive modeling.

Book excerpt: According to the European legislation (Regulation EC No 853/2004), the food business operators collecting raw milk intended for the production of milk and dairy products must ensure compliance with certain health requirements for the animals. The animals must not show any symptoms of infectious diseases transmittable to humans, or signs of diseases of the udder or the genital tract that could contaminate milk. Furthermore, they must belong to a holding free or officially free of tuberculosis and brucellosis, and no unauthorized substances or authorized drugs must have been administered without respect to the withdrawal period. Dairy Farming: Operations Management, Animal Welfare and Milk Production presents a study with the goal of evaluating the compliance with the mentioned criteria in milk samples collected from 100 different dairy farms located in Central Italy. Additionally, under European milk quotas, dairy farms in Europe were limited in the amount of milk they could produce. While quotas were gradually increased over the past four decades, European milking quotas were completely abolished in April 2015 to help meet an expected 20% increase in the global consumption of milk and dairy products by 2050. With this, European dairy farmers can freely expand milk production based upon expected milk prices controlled by open market supply and demand. The authors present a review focused on milk production forecasting models and data variation from a past and future perspective. A comprehensive review of model applications and comparisons from studies over the past two decades is carried out, and both classical and modern methods are reviewed analysed. The concluding review focuses on scientific LCA studies conducted on a variety of different milk production systems, including the treatment of milk co-products, different allocation methods, the assessment of environmental impacts caused by fertilizers and agrochemicals in feed grain production and in the different stages of milk production. However, the methodology requires a higher degree of standardization, especially for the analysis of complex agricultural and livestock systems and their various forms and characteristics.

Available in PDF, EPUB and Kindle. Book excerpt: In a lively narrative that spans more than two centuries, Meredith Martin tells the story of a royal and aristocratic building type that has been largely forgotten today: the pleasure dairy of early modern France. These garden structures—most famously the faux-rustic, white marble dairy built for Marie-Antoinette’s Hameau at Versailles—have long been dismissed as the trifling follies of a reckless elite. Martin challenges such assumptions and reveals the pivotal role that pleasure dairies played in cultural and political life, especially with respect to polarizing debates about nobility, femininity, and domesticity. Together with other forms of pastoral architecture such as model farms and hermitages, pleasure dairies were crucial arenas for elite women to exercise and experiment with identity and power. Opening with Catherine de’ Medici’s lavish dairy at Fontainebleau (c. 1560), Martin’s book explores how French queens and noblewomen used pleasure dairies to naturalize their status, display their cultivated tastes, and proclaim their virtue as nurturing mothers and capable estate managers. Pleasure dairies also provided women with a site to promote good health, by spending time in salubrious gardens and consuming fresh milk. Illustrated with a dazzling array of images and photographs, Dairy Queens sheds new light on architecture, self, and society in the ancien régime.
