O suco foi preservado por alta temperatura, baixa temperatura e aditivos quimicos, enquanto que o nectar foi conservado somente por alta e baixa temperatura. Avaliou-se a estabilidade desses produtos por um periodo de 120 dias, a intervalos de 30 dias, atraves de analises fisico-quimicas e quimicas. Realizou-se a avaliacao sensorial dos nectares recem-processados e apos o periodo de armazenamento.
