Available in PDF, EPUB and Kindle. Book excerpt: Increasingly, the tourism industry is looking towards sustainability, responding to public demand and local environmental policy. This monograph explores the concept of sustainability in the context of heritage and tourism studies, as well as examining the practices adopted to realize or enhance the sustainability of these industries. Beginning with a broad overview, outlining the theory and scholarly landscape, this book then focuses on cases of sustainable tourism in Japan, exploring the concept of ‘mottainai’. Mottainai is a traditional Japanese term and means an ethical attitude towards the use of a range of resources needed for human life. This Japanese word can be understood as ‘what a waste’, and can promote the environmentally-friendly way of life, encouraging reduce, reuse and recycle. This book will be of interest to scholars and students of heritage, tourism, and sustainability management; both those interested in Japan specifically, and those who are interested in new approaches for sustainability in tourism management.

Book excerpt: Westerners have long imagined the Himalayas as the world’s last untouched place and a repository of redemptive power and wisdom. Beatniks, hippie seekers, spiritual tourists, mountain climbers—diverse groups of people have traveled there over the years, searching for their own personal Shangri-La. In Far Out, Mark Liechty traces the Western fantasies that captured the imagination of tourists in the decades after World War II, asking how the idea of Nepal shaped the everyday cross-cultural interactions that it made possible. Emerging from centuries of political isolation but eager to engage the world, Nepalis struggled to make sense of the hordes of exotic, enthusiastic foreigners. They quickly embraced the phenomenon, however, and harnessed it to their own ends by building tourists’ fantasies into their national image and crafting Nepal as a premier tourist destination. Liechty describes three distinct phases: the postwar era, when the country provided a Raj-like throwback experience for rich Americans; Nepal’s emergence as an exotic outpost of hippie counterculture in the 1960s; and its rebranding into a hip adventure destination, which began in the 1970s and continues today. He shows how Western projections of Nepal as an isolated place inspired creative enterprises and, paradoxically, allowed locals to participate in the global economy. Based on twenty-five years of research, Far Out blends ethnographic analysis, a lifelong passion for Nepal, and a touch of humor to produce the first comprehensive history of what tourists looked for—and found—on the road to Kathmandu.

Available in PDF, EPUB and Kindle. Book excerpt: Presenting a social history of colonial food practices in India, Malaysia and Singapore, this book discusses the contribution that Asian domestic servants made towards the development of this cuisine between 1858 and 1963. Domestic cookbooks, household management manuals, memoirs, diaries and travelogues are used to investigate the culinary practices in the colonial household, as well as in clubs, hill stations, hotels and restaurants. Challenging accepted ideas about colonial cuisine, the book argues that a distinctive cuisine emerged as a result of negotiation and collaboration between the expatriate British and local people, and included dishes such as curries, mulligatawny, kedgeree, country captain and pish pash. The cuisine evolved over time, with the indigenous servants preparing both local and European foods. The book highlights both the role and representation of domestic servants in the colonies. It is an important contribution for students and scholars of food history and colonial history, as well as Asian Studies.

Book excerpt: The growth of the Chinese economy and the emergence of the Chinese middle class have fuelled the rapid expansion of China’s outbound tourism market, with many destinations around the world trying to capitalise on the opportunities created by the growing number of Chinese visitors. This book specifically focuses on the demand for food and wine tourism experiences by Chinese tourists, which in recent years has become an important constituent of destination competitiveness. Looking at the different ways in which individual destinations have responded to this increasing demand, this book provides a better understanding of the preferences, motivations and perceptions that underlie food and wine consumption by Chinese tourists. It also illustrates how food and wine tourism experiences have been used in a range of international destinations to specifically attract visitors from China. Including a range of case examples from the Asia-Pacific region and Europe, this book ultimately investigates the strategic directions adopted to guide destination development and marketing initiatives. Such a perspective provides a novel contribution to the still limited body of knowledge on China outbound tourism and will be of interest to upper level students, researchers and academics in Tourism and Hospitality.
