Esto sería una tremenda equivocación porque, por muy abstracto que nos parezca, el tema no deja de ser algo muy cercano que nos afecta en el día a día. En este contexto parece fundamental el ejercicio de identificación de actividades que, de una manera natural, aparecen formando parte de nuestro quehacer cotidiano y, al mismo tiempo, todos percibimos como innovadoras. Este es el caso de la cocina, en general, y de la alta cocina, en particular, que se nos presenta como un buen ejemplo de sistema de innovación en el que poder identificar conceptos, principios, leyes y modelos para innovar. Pero analizados como sistema de innovación, no todos los restaurantes de alta cocina nos van a aportar lo mismo, ni nos van a llevar a hacernos las mismas preguntas, o nos van a permitir sacar las mismas lecciones. Tampoco van a tener el mismo potencial de innovación. Porque las diferencias existen, y para bien o para mal, no todos son iguales. Aquí es donde aparecen Mugaritz y Andoni Luis Aduriz. De la relación entre José Luis Larrea y Andoni Luis Aduriz ha resultado un espacio de conocimiento compartido sobre algo que amenaza con convertirse en una obsesión para los dos: se trata de la innovación.
