A revisão estuda o histórico no Brasil, sua importância como alimento e alimento funcional, com comparações entre a soja e outros alimentos. Também é abordado o tema isoflavonas, sua influência sobre a planta de soja e também os benefícios à saúde humana. Foi constatada influência positiva sobre doenças degenerativas como câncer de próstata, mama, entre outras, melhoria no sistema circulatório, diminuindo nível de triglicerídeos, colesterol, tratamento para climatérico entre outras funções. O trabalho científico foi desenvolvido para identificar diferenças na composição de soja cultivada em sistema orgânico, comparada com o sistema não orgânico, com amostras coletadas principalmente no Paraná, todas cultivar BR - 36. Foram analisados o teor de proteína, óleo, cinzas, carboidratos, isoflavonas e minerais. Houve diferença entre os sistemas de cultivo. O sistema orgânico apresentou menor concentração de proteína (43,58%) quando comparado com o sistema não orgânico (45,14%), e maior concentração de óleo (22,16% comparado com 20,20%). Na composição das isoflavonas genistina, malonil genistina e daidzina, o sistema orgânico também apresentou menores teores. Quanto o teor dos minerais para os macroelementos (em mg g-1), o sistema orgânico apresentou menor concentração de P (4,59 e 4,05), K (16,41 e 13,86) e maior concentração em Ca (3,31 e 2,39). Para os microelementos (mg g-1) o sistema orgânico teve maiores resultados em Zn (39,34 e 3636,78), Mn (29,42 e 23,05) e menores em Fe (133,51 e 103,2) e Cu (15,38 e 12,56).
