Available in PDF, EPUB and Kindle. Book excerpt: This volume consists of full length manuscripts of 159 of the 165 invited papers presented at World Soybean Research Conference III that was held in the Scheman Continuing Education Building at Iowa State University August 12-17, 1984. The authors, widely recognized as world authorities in their fields, represent all aspects of soybean research activity: breeding and genetics, crop and soil management, economics, entomology, food science, international programs, nematology, pathology, physiology, plant nutrition, rhizobiology, utilization, and weed science. This proceedings, which contains more than 1200 pages of information including many tables and figures, represents the most extensive compilation of soybean research results since the previous proceedings were published in 1980. It should be of value to research scientists, students and administrators alike.

Book Synopsis Plant Protein Foods by : Annamalai Manickavasagan
Download or read book Plant Protein Foods written by Annamalai Manickavasagan and published by Springer Nature. This book was released on 2022-03-28 with total page 522 pages. Available in PDF, EPUB and Kindle. Book excerpt: Regular consumption of plant-based protein foods instead of animal-based protein foods reduces the risk factors for cardiovascular diseases, diabetes and certain cancers. Apart from human health, the adverse effects to the environment due to the production of protein is much higher for animal sources than plant sources. Greenhouse gas emissions from the production of one pound of lamb meat, for example, are thirty times higher than one pound of lentils. As consumers are increasingly aware of personal health and environmental impact of food production, the demand for plant protein foods is increasing globally. This trend has prompted several large-scale collaborative research projects on plant-based protein products supported by the industry and governmental agencies. Several established multinational meat companies have started adding plant-protein product lines to meet the current demand. This book presents the first comprehensive compilation of literature on plant-based protein foods. Chapters cover protein extraction technologies from plants, comparison of amino acid profiles of plant- and animal-based proteins, approaches to product development for plant-based protein products, health benefits of plant-based protein foods, market opportunities, and future challenges. Plant Protein Foods is an essential reference for consumers, students, researchers, food manufacturers and other stakeholders interested in this domain.

Book Synopsis Characterization of Protein-flavor Interactions Using Inverse Gas Chromatography by : Ozlem Dolu
Download or read book Characterization of Protein-flavor Interactions Using Inverse Gas Chromatography written by Ozlem Dolu and published by . This book was released on 2013 with total page 132 pages. Available in PDF, EPUB and Kindle. Book excerpt: In this research, we investigated the retention/release mechanism of selected flavor compounds on or from protein matrices by establishing quantitative design principles for these interactions. Thermodynamic parameters (partition coefficient Kp, free energy of adsorption?Gs and the enthalpy of adsorption?Hs) of the interaction between selected flavor compounds (hexane, hexanal, hexanol and d-limonene) and protein systems (soy protein isolate and zein) were determined by using inverse gas chromatography under different temperatures and relatively humid conditions. The inverse gas chromatography system was fitted with an additional humidification system that could maintain the relative humidity of the carrier gas, thus enabling the evaluation of the effect of relative humidity on the measured quantities. Increasing temperature and relative humidity led to less favorable interaction between selected flavors and proteins. Flavor retention at high relative humidity was less than at low relative humidity or at dry conditions. This suggests that flavor compounds and water molecules might be competing to bind to the available sides of the protein. Quantitative characterization of the mechanism and thermodynamics of flavor binding and release in protein matrices will benefit the food industry to efficiently develop flavored foods.
