Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Why and How to Use Milk Milk and its products are indispensable to the growth of the child and to the health of the adult. For these, there is no substitute. For the infant, milk is a perfect food; for the growing child, milk and the products of the dairy are essential foods; and for adults, they are the most important foods. Food is not merely something to chew. It must furnish material for the growth and repair of the body, material for body heat and energy, and material for use by the body as regulating substances. Milk fulfils all these requirements. It contains protein, from which the body builds new cells and repairs worn-out tissues. It contains fat and sugar, which serve as a source of heat and energy for muscular activity, and contains mineral matter which has a regulatory effect and which enters into the composition of the body, especially the bones and teeth. Not only does milk supply these demands, but it contains also the essential food factors, or vitamines, - Fat-soluble A, Water-soluble B, and Water-soluble C, without which normal growth is impossible and without which the health of the adult cannot be maintained. Book excerpt: Excerpt from The Common Sense of the Milk Question No apology is offered for the book except for its many shortcomings, which none will deplore more than the author nor for the fact that it is written by a layman for lay readers. There is a voluminous and bewildering literature wholly devoted to the subject, as may be inferred from the fact that one single bibliography with which I am acquainted con tains no less than 8375 titles, and is still so incomplete as to cause the student a good deal of exasperation! Much of this literature perhaps I should not be far wrong if I were to say almost the whole of it is either not accessible to the ordinary reader, or, what is equally important, unintelligible to him. Book excerpt: Excerpt from Milk This volume is simply a collection of essays contributed to the various medical societies and journals during the past seventeen years. It would be vain for the author to claim that there was no other motive than that of love for scientific truth impelling the work. However, as a physician and veterinarian, it cannot be judged dishonest for him to say that there has been a sincere desire to reach the truth and follow it. And, on the other hand, as a dairy man trying to produce the best milk that is within human possibility, there has been, of course, more or less trade interest. Therefore, if these two designs can be allowed without prejudice on the part of the reader, there is hope that the work will benefit others as well as the. Book excerpt: Excerpt from Milk: Its Importance as Food McCollum believes that the achievements of any race of people in science, art, and literature depend more on the milk consumption of that people than on any other factor. In other words, a nation that consumes milk liberally is bound to be a healthy, virile, and productive nation. "The Chinese, Japanese, and the peoples of the tropics generally have employed the leaves of plants as almost their sole protective food. They are characterized by small stature, relatively short span of life, high infant mortality, and by continued adherence to the employment of the simple mechanical inventions of their forefathers." It is said that the Japanese child, fed without cow's milk, requires two or three years longer than the American to reach maturity, while the Japanese farmer of 60 corresponds in health and vigor to the American of 80 years of age. Several diseases which afflict mankind are known to be caused by a faulty diet. Beri-beri, prevalent in the Orient among peoples subsisting almost entirely on degerminated grains, and characterized by extreme nervous debility and degeneration, disappears when protective foods are added to the diet. Pellagra, which is common in localities where the diet is poor, especially where meal made from degerminated corn is used as the chief food, is practically unknown in regions where the protective foods are consumed in liberal amounts. Scurvy appears only among people restricted to a diet of preserved foods devoid of fresh fruits, vegetables, milk, and fresh meat. Rickets is common among the children of the very poor who live on a diet of degerminated wheat, corn, and rice together with tubers and meats. It is quite possible that there is a close connection also between faulty diet and tuberculosis. McCollum says, "An examination of any large groups of people in the cities will show that where there is a high mortality from tuberculosis, milk is not being used to any great extent, and in any large group where milk purchases are large this disease is not a menace. It is well known that in institutions where tuberculosis is successfully treated milk forms the principal article of the diet of the inmates." Do we use sufficient milk in the United States? As a whole, dairy products furnish about one-sixth of the total food of the average American. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from Observations Upon the Natural History of Epidemic Diarrhoea The causative agencies from which springs the plentiful harvest of child mortality in large cities may be conceived as a felted mass of rootlets almost inextricably intertwined. Those of poverty, bad housing, bad feeding, and neglect, may be severally recognized, but the extent of their interrelations with actual respiratory and alimentary disease - those to which the greater part of the mortality is referred - can be traced only with difficulty. It is the object Of this work to aid ln the labour of cutting away the matrix and entangling fibres and to lay bare the hidden ramifications of at least one important causative agency - epidemic diarrhoea. This affection - if we accept provisionally the more novel and generally favoured conception. As to its nature - is revealed as something very like an ordinary infectious disease, and one which permeates all classes, while the excessive mortality it gathers round itself in urban centres must be regarded as something superadded, owing to the vicious circle it forms with those baneful conditions of slum life mentioned above. On the other hand, its peculiarly intimate association with the circum stances of domestic life, from the continual faecal pollution of the interior of the household by infants and others, tends to make it more so than other affections of the kind peculiarly a class disease, and an especial scourge of dirty neighbourhoods. Dirty towns may however be saved from excessive mortality by a high percentage of breast feeding. A notable point in the interesting comparison that can be drawn between diarrhoea and typhoid fever is that, in accordance with their peculiarly opposite age-incidence curves, the marked and habitual depositing of infectious excreta within the household in the former disease may make the question of water-closet versus conservancy pan a matter of far less importance than in the latter. Book excerpt: Excerpt from Milk: The Indispensable Food for Children Our Nation, with the majority of all civilized nations, finds itself plunged into a world war. As the atmosphere clears, after the first tremendous endeavor to create armies and to feed and equip our own soldiers as well as the population of our allies, thinking people are asking themselves how our home population is to maintain its health and the standards of living which have cost us so much effort to achieve. How will war affect the health and welfare of our children? What can we learn from the experience of European countries, already at war over three years, in regard to the influence on child life of the changes and privations inevitably produced by the war? What dangers and disasters may we avert if we take immediate precautions to prevent war conditions from affecting our child population in the adverse ways so plainly shown in Europe? The necessity of our Nation's feeding an ever-increasing number must be granted; also, that this food can be obtained in only two ways - by increased production or by decreased use of food in this country. The saving of food in this latter way may be brought about partly by persuading individuals to eat less and to choose certain types of food which can not be exported, and partly by eliminating waste. It is probably safe to assert that curtailing the total amount of his daily diet will be beneficial for the average adult. More than this, we are willing to agree that substitution of one typo of food for another of the same typo can be safely carried out by the average healthy American adult to-day if the substitution is intelligently planned. On the other hand, the average child in America can not have its usual amount of food safely curtailed, nor is it wise during childhood to attempt, except in the case of cereals, to exchange or substitute the important articles of food. The results of underfeeding or indiscriminate food substitution in childhood are startlingly shown abroad as a result of the war, and are beginning to be evident in our own great cities.
