Book excerpt: Los estudios científicos sobre el envejecimiento han aparecido a lo largo del siglo XX como respuesta a un imperativo demográfico, ya que el progresivo aumento de la esperanza de vida, y por tanto, del numero de ancianos detrae importantes recursos sanitarios y sociales. Uno de los factores mas importantes desde el punto de vista asistencial y preventivo es la alimentación y el estudio de los problemas nutricionales, que de manera patente o con expresión subclinica, se manifiestan con mayor frecuencia en estos colectivos. Ante el interés que en otras comunidades españolas se esta manifestando sobre el conocimiento del estado nutricional en la vejez, y al no existir ningún estudio en nuestra provincia sobre dicho tema, en el departamento de nutrición y bromatología se ha planteado un ambicioso proyecto para conocer el estado nutricional de los ancianos granadinos. En esta tesis doctoral se ha realizado un estudio sobre la valoración nutricional de un colectivo de ancianos institucionalizados con los siguientes objetivos: conocer las características socio-culturales y hábitos de vida de la población estudiada. Evaluar la ingsta de macro y micronutrientes, mediante el método de pasada directa de los alimentos. Estudiar las características antropométricas y datos bioquímicos, en relación con el estado nutricional. Determinación serica de algunos minerales y vitaminas de interés nutricional.

La desnutrición es un problema muy frecuente en este tipo de personas, y también se ha asociado con el deterioro cognitivo, pues los nutrientes participan en la fisiología cerebral así como en la defensa antioxidante. Los cuidados que se proporcionan a los ancianos son de vital importancia para mantener un buen estado nutricional y, en consecuencia, su estado cognitivo, por lo que se consideró de interés valorar el perfil nutricional y funcional de un colectivo de ancianos institucionalizados en una residencia geriátrica y su relación con el estado cognitivo, con el objetivo de conocer los factores más importantes a tener en cuenta en el momento de establecer un programa de cuidados e intervenciones, para intentar atenuar el deterioro cognitivo existente en este tipo de instituciones a través de la mejora del estado nutricional de los residentes.

Book excerpt: La nutrición juega un papel esencial en el mantenimiento de la capacidad funcional, cognitiva y afectiva, especialmente al final de la vida, por lo que el objetivo de este trabajo ha sido realizar una evaluación nutricional de un colectivo de ancianos institucionalizados de la comunidad de Madrid, así como la posible relación existente entre el estado nutricional de los mismos con la función motora, mental y afectiva. La muestra estaba formada por un 183 individuos, 63 varones y 120 mujeres, cuya edad media fue de 82.3 años. Mediante la utilización de indicadores antropométricos, dietéticos, hematológicos, bioquímicos, así como una batería de diversos tests para el estudio de capacidades, los resultados indican que los ancianos con una facultad física, mental y afectiva sin deteriorar presentaron una ingesta y contribución a las IR más adecuada de ciertas vitaminas y minerales (riboflavina y ácido fólico, hierro y magnesio), y algunos micronutrientes con poder antioxidante (vitamina C y E, y beta-caroteno), poniendo de manifiesto la existencia de una relación entre el estado nutricional y los diferentes aspectos que pueden condicionar la calidad de vida de las personas mayores. Los resultados plantean cuestiones importantes sobre la dieta en esas instituciones que las autoridades sanitarias deberían tener en cuenta.
