Book excerpt: This authoritative two-volume reference provides valuable, necessary information on the principles underlying the production of microbiologically safe and stable foods. The work begins with an overview and then addresses four major areas: 'Principles and application of food preservation techniques' covers the specific techniques that defeat growth of harmful microorganisms, how those techniques work, how they are used, and how their effectiveness is measured. 'Microbial ecology of different types of food' provides a food-by-food accounting of food composition, naturally occurring microflora, effects of processing, how spoiling can occur, and preservation. 'Foodborne pathogens' profiles the most important and the most dangerous microorganisms that can be found in foods, including bacteria, viruses, parasites, mycotoxins, and 'mad cow disease.' The section also looks at the economic aspects and long-term consequences of foodborne disease. 'Assurance of the microbiological safety and quality of foods' scrutinizes all aspects of quality assurance, including HACCP, hygienic factory design, methods of detecting organisms, risk assessment, legislation, and the design and accreditation of food microbiology laboratories. Tables, photographs, illustrations, chapter-by-chapter references, and a thorough index complete each volume. This reference is of value to all academic, research, industrial and laboratory libraries supporting food programs; and all institutions involved in food safety, microbiology and food microbiology, quality assurance and assessment, food legislation, and generally food science and technology.

Available in PDF, EPUB and Kindle. Book excerpt: An organised approach to comprehensive organizational management is what's known as total quality management (TQM). The method's primary objective is to enhance the quality of an organization's outputs, such as its products and services, by means of the ongoing development and refinement of its internal procedures. It is possible for the standards that are established as part of the TQM strategy to reflect both the internal goals of the organisation as well as any existing industry standards. Detecting, minimising, and ultimately doing away with faults is the goal of total quality management (TQM), which is a continual process. It is used to simplify the administration of supply chains, enhance customer service, and guarantee that personnel get appropriate training. The primary objective is to enhance the quality of an organization's outputs, which may include both products and services, by continuously enhancing the organization's internal procedures. The goal of total quality management is to ensure that each participant in the production process is held responsible for the entire quality of the good or service that is delivered to the customer. TQM typically adheres to a set of eight guiding principles, some of which include putting the customer first, always striving to do better, and strictly following procedures. The readers of this book will benefit from increased understanding in the subject of total quality management as a result of the many topics and chapters that are included in this book. As is well known, quality management is an essential component of every company or organisation. The writers of this book have included the necessary material that is related to the subject. Every chapter of this book covers a different subject for the reader to learn about. Read this book if you have any interest in starting a company or moving your career in this direction. It is suitable for anybody.

Book excerpt: The book presents statistical methods and models that can usefully support the ev- uation of educational services and quality of products. The contributions collected in this book summarize the work of several researchers from the universities of Bologna, Firenze, Napoli and Padova. The contributions are written with a cons- tent notation and a uni?ed view, and concern methodological advances developed mostly with reference to speci?c problems of evaluation using real data sets. The evaluation of educational services, as well as the analysis of judgements and preferences, poses severe methodological challenges because of the presence of one or more of the following aspects: the observational (non experimental) nature of the context, which is associated with the well-known problems of selection bias and presence of nuisance factors; the hierarchical structure of the data, that entails c- related observations and consideration of effects at different levels of the hierarchy and their interactions (multilevel analysis); the multivariate and qualitative nature of the dependent variable, that requires the use of ad hoc statistical methodologies; the presence of non observable factors, e. g. the satisfaction, calling for the use of latent variables models; the simultaneous presence of components of pleasure and components of uncertainty in the explication of the judgments, that asks for the speci?cation and estimation of mixture models. The ?rst part of the book deals with latent variable models.

Book excerpt: Society, globally, has entered into what might be called the “service economy.” Services now constitute the largest share of GDP in most countries and provide the major source of employment in both developed and developing countries. Services permeate all aspects of peoples’ lives and are becoming inseparable from most aspects of economic activity. “Quality management” has been a dominating managerial practice since World War II. With quality management initially associated with manufacturing industries, one might assume the relevance of quality management might decrease with the emergence of the service economy. To the contrary, the emergence of the service economy strengthened the importance of quality issues, which no longer are associated only with manufacturing industries but are increasingly applied in all service sectors, as well. Today, we talk not only about product or service quality but have even expanded the framework of quality to quality of life and quality of environment. Thus, quality and services have emerged in parallel as closely interrelated fields. The Encyclopedia of Quality and the Service Economy explores such relevant questions as: What are the characteristics, nature, and definitions of quality and services? How do we define quality of products, quality of services, or quality of life? How are services distinguished from goods? How do we measure various aspects of quality and services? How can products and service quality be managed most effectively and efficiently? What is the role of customers in creation of values? These questions and more are explored within the pages of this two-volume, A-to-Z reference work.

Book excerpt: From being the occupation of a marginal (and frequently marginalised) group of researchers, the linguistic analysis of machine-readable language corpora has moved to the mainstream of research on the English language. In this process an impressive body of results has accumulated which, over and above the intrinsic descriptive interest it holds for students of the English language, forces a major and systematic re-thinking of foundational issues in linguistic theory. Corpus linguistics and linguistic theory was accordingly chosen as the motto for the twentieth annual gathering of ICAME, the International Computer Archive of Modern/ Medieval English, which was hosted by the University of Freiburg (Germany) in 1999. The present volume, which presents selected papers from this conference, thus builds on previous successful work in the computer-aided description of English and at the same time represents an attempt at stock-taking and methodological reflection in a linguistic subdiscipline that has clearly come of age. Contributions cover all levels of linguistic description - from phonology/ prosody, through grammar and semantics to discourse-analytical issues such as genre or gender-specific linguistic usage. They are united by a desire to further the dialogue between the corpus-linguistic community and researchers working in other traditions. Thereby, the atmosphere ranges from undisguised skepticism (as expressed by Noam Chomsky in an interview which is part of the opening contribution by Bas Aarts) to empirically substantiated optimism (as, for example, in Bernadette Vine's significantly titled contribution Getting things done).
