Book excerpt: This research seeks to examine whether comprehensive goal-matching information encourages people to consume more sustainably. Comprehensive goal-matching information is defined as contents that cover both the superordinate goal (a.k.a. abstract level information of why the focal goal should be pursued) and the subordinate goal (a.k.a. the concrete level information of how the focal goal can be achieved) of a goal-oriented behavior. I first review current theories about the psychological factors that affect consumer decision making, as well as the associated empirical findings of various techniques that make use of these factors. I then focus on the role of information on consumer decision making. I argue that the Theory of Trying is the best candidate to explain why past attempts to promote sustainable consumer behavior through information campaign have failed. Sustainable consumer behavior is a form of goal pursuit; thus, the key to encourage such behavior is to craft tangible goal-matching information. Goal-matching information can be shallow (i.e., only mentioning subordinate aspect, also known as concrete), deep (i.e., only mentioning superordinate aspect, also known as abstract), or comprehensive (i.e., covering both subordinate and superordinate aspects). The hypothesis is that the comprehensive information out-performs the others because it connects all the dots. Next, I lay out a two-stage process-stage one is trying, followed by actual behavior in stage two. The transition from stage one to stage two is characterized by the removal of contextual constraints. Two experimental studies are designed to test this theoretical framework in the context of plastic consumption. Study 1 asks participants to read different types of information in week 1 and assesses their efforts at trying to consume less plastic in the second and third week. The structure of Study 1 replicates the research of the theory of trying. The results from Study 1 are inconclusive. Study 2 introduces a novel task with a carefully designed sustainable consumption score. The main findings are that the comprehensive and the concrete-only information are both better than abstract-only information at improving participants' sustainable plastic consumption score. However, the information treatment effect is heavily reduced by a negative interaction effect between the treatment and the individual green consumption value score. For a population that has been trying to be sustainable such as the students in the study, the added value of information comprehensiveness is limited, largely because they already have the appropriate knowledge. In addition, the evidence unambiguously supports the stage two alternative hypothesis, which is that removing contextual constraints promotes sustainable consumer behavior. However, the study finds that when participants are provided with subjectively sustainable alternative products, they are also more likely to spend more in total, suggesting a substitution effect that supports the moral licensing theory.

To further specify the research context, this thesis is based on the age cohort of Gen Z. In this respect, the intention is to understand what motivates members of Gen Z to consume sustainably. On the other hand, it aims to find out what factors prevent Gen Z from behaving in accordance with their sustainable motivation and attitude. Furthermore, as Gen Z members can be seen as future leaders and decision makers, it is particularly important and interesting to analyze the consumption behavior of this cohort in more detail. The results of this work are intended to contribute to a better understanding of the ABG among Gen Z members in the context of food consumption. From these findings, practical implications will be derived that can contribute to a greener future for the planet and help retailers and the government to better design point of sale (POS) interventions and other campaigns to increase sustainable shopping behavior among consumers. In addition, further areas of research can be identified that have the potential to expand the body of knowledge on sustainable food consumption. Sustainability is probably the most discussed topic in recent times, and it is noticeable that it must be integrated into almost every aspect of life. It is evident that the population is increasingly adopting pro-environmental attitudes, but there is little change in their actual behavior. The resulting Attitude-Behavior-Gap can be observed in various consumption contexts, such as in food consumption. More precisely, the food system is responsible for 30 percent of greenhouse gas emissions, thus food consumption must become more sustainable to meet the climate goals. However, although the issue of sustainability in different consumption contexts is widely discussed, little is known about the drivers and barriers of sustainable food consumption, the reasons why an Attitude-Behavior-Gap occurs and how shoppers deal with it. Using a Grounded Theory approach, in-depth insights are gained from eleven interviews with a sample of Generation Z members. The main barriers to sustainable food consumption were found to be habitual buying, convenience, selfishness, and financial reasons.

Bringing together legal scholars from the Global South and the Global North, it examines these questions in the context of national, transnational and international law, within single and plural legal systems, and across a range of sector-specific issue areas. The chapters identify how traditional legal disciplines (e.g. constitutional law, consumer law, public procurement, international public law), sector-related regulation (e.g. energy, water, waste), and legal rules in specific areas (e.g. eco-labelling and packing) engage with the concept of sustainable consumption. A number of the contributions describe this relationship by isolating a national legal system, while others approach it from the vantage point of legal pluralism, exploring the conflicts and convergences of rules between multiple international treaties (or guidelines) and those between the rules of international and transnational law (or both) vis-à-vis national legal systems. While sustainable consumption is recognised as an important field of interdisciplinary research linking virtually all social science disciplines, legal scholarship, in contrast, has neglected the importance of the field of sustainable consumption to the law. This book fills the gap.
