Cet ouvrage est le premier travail de synthèse qui aborde à la fois les bases scientifiques fondamentales sur les bactéries lactiques du vin et le processus de fermentation malolactique, les développements récents de la recherche (dans sa première partie) et des situations rencontrées en production, au travers de nombreuses expérimentations et observations de terrain (dans sa seconde partie).
