They all derive their name from the Muscatel or Muscat grape, from which these raisins are made. As to the origin of the name Muscat, opinions diner. The most popular one is that the grape got its name from the supposed musky flavor peculiar to this variety of grape. It is, however, far more likely that the name is a very ancient one, and derived from the Latin word Muscameaning a fly, - these fine grapes when drying being especially attractive to flies. The Romans called this grape, Uva Apiaria, meaning bee grapes, or grapes beloved by bees, from the fact that the bees are especially attracted to these grapes when they are being dried. The Muscat or Muscatel would then not originally designate a certain variety of grapes, but grapes used for drying generally. In the course of time the name was transferred to or especially given to the best grape for drying purposes, - the Muscatel of our own times. The Thompson Seedless raisin (also known as sultanina) is the prevailing variety in California, and its first cousin, the very similar sultana, dominates the raisin vineyards of Greece, Iran, and Turkey. The so-called sultana in Australia-the main variety there-is actually a Thompson Seedless. Sultanas are also important in Cyprus and to some extent in South Africa, where Thompson Seedless is the main variety. Another variety of raisin, but one which accounts for only a minor tonnage, is the Muscat. This is pro duced from a larger grape than the sultana or Thompson; it has seeds and a pronounced flavor. Some are marketed with the seeds removed. The cluster Malagas and stemmed Valencias of Spain are Muscats, Spain being the world's leading producer of Muscats. California produces some, as does Australia, where they comprise most of the tonnage listed as lexia raisins. Greece, Cyprus, Turkey, and South Africa produce small quantities of Muscat raisins, too. Book excerpt: Excerpt from Marketing Tokay Grapes The Lodi Growers and Shippers League had an additional objective the proration of empty cars among grape shippers in the Lodi area dur ing periods of car shortage. The California Grape Control Board had a further objective, namely, that of eliminating the surplus of grapes if and when the Grape Con trol Board determined that a surplus existed. Stabilization fees were to be collected on each ton of raisins, juice, and table grapes, which were to be used to purchase surplus grapes and allow them to remain unhar vested or convert them into by-products. The Control Board's surplus operations in 1930 were based on the assumption that the principal excess above normal market requirements was in the raisin varieties, principally Muscats and Thompson Seedless, which entered both the fresh and dried-fruit markets. It was felt by fresh and j nice-grape shippers on the Control Board that their principal difficulty was caused by the shipment of raisin varieties into fresh chan nels. Consequently, most of the funds available for the purchase of sur plus grapes were employed in the purchase of raisin grapes.8 However, as the season progressed and after the Control Board's funds for the purchase of grapes were exhausted, it became apparent that there was a quantity of other varieties in excess of normal market requirements, among them Tokays. Several groups of growers thereupon instructed the agencies through whom they marketed not to pay the stabilization fees inasmuch as the Control Board could not purchase the surplus of the varieties which they raised. The Control Board brought suits against the marketing agencies to collect the fees, most of which were compre mised out of court.
