Book excerpt: Excerpt from The Prevention of Dental Caries and Oral Sepsis The fact of the first edition being exhausted in the year following its publication has allowed but small opportunity for the insertion in the present edition of much that I had hoped to include, more especially in relation to work being done by others along similar lines in America, particularly by Drs. Gies, Lothrop, and Howe, and my own investigation into the cause of immunity in less civilized Maori children. Nevertheless, some fresh subjects have been broached in the present edition. These include accounts of our investigations into the bacteriology of the mouths of immune Maori children, the anatomy and physiology of mastication, thyroid insufficiency and dental caries, and the relationship between oral and other alimentary secretions. These subjects are dealt with in Chapters III., IV., XIII., and XVII. respectively. Also, additional experiments are described bearing on the solubility of the enamel surface in carbon dioxide, the neutralizing powers of tooth substance and saliva, the viscosity of saliva, the action of sulphocyanates in saliva, the digestion of starch, the effects of sugar-cane, white bread, and whole-meal bread on the teeth. Considerable additional evidence has been collected showing the lack of toughness or of fibrous elements in the food of races immune to caries. A number of fresh illustrations are also included. This work has grown so largely since its inception that its original claim to be the R.C.S.E. Cartwright Prize Essay for 1910 can no longer be sustained. My sincere thanks are due to my friend Mr. R.
