Available in PDF, EPUB and Kindle. Book excerpt: The production of environmentally friendly, sustainable, chemical-free food continues to challenge the food industry, spurring on investigations into alternative food processing techniques that are more sophisticated and diverse than current practices. Exploring one of these emerging solutions, Ultraviolet Light in Food Technology: Principles and Applications incorporates the fundamentals of continuous and pulsed UV light generation and propagation; current food regulations; recommendations for optimal UV reactor design, selection, and validation; information on both commercially available and under-development UV sources; and the outlook for future food applications. After reviewing essential terms, definitions, and current applications, the book emphasizes the need to properly assess the physical and chemical properties in foods that influence the effectiveness of UV treatment and impact inactivation kinetics. It also addresses the effects of UV processing on food quality, before considering the engineering aspects of UV light treatment, such as transport phenomena, process calculations, and continuous-flow reactor geometries. The book then describes the principles of validating UV reactors as well as the principles and applications of UV pulsed light, including microbial inactivation in water, meat, fruits, vegetables, and packaging materials. For anyone working in food research, development, and operations, this resource provides broad, accessible information on the science and applications of UV light technology. It shows how UV light irradiation can be used as a physical preservation method in food processing.

Book excerpt: Progress in Astronautics and Aeronautics, Volume 21: Thermal Design Principles of Spacecraft and Entry Bodies is a collection of technical papers drawn mainly from the American Institute of Aeronautics and Astronautics Third Thermophysics Specialist Conference, held in Los Angeles, California on June 24-26, 1968 This volume is divided into three parts. The first part covers some aspects of thermal processes and design, including thermal analysis, convection, radiation, ablation, and space rocket effects. The second part surveys the remote measurements of the thermophysical and thermal radiation properties and joint conductance, which are critical criteria for space thermal design. The third part focuses on the space environmental effects on thermal coatings. This part deals first with the theory of radiative degradation, followed by a presentation of the laboratory measurements. This part also looks into the results of several flight experiments. This book will be of great value to thermophysicists, space engineers, and designers who are working in the space science fields.

Book excerpt: Although variations in the intensity of solar ultraviolet irradiation of the Earth's surface may provide significant opportunities for observation in the ultraviolet spectrum, research in the ultraviolet region has been neglected by terrestrial scientists. The spectral properties of vegetation and soils and of undisturbed weathered natural surfaces of rocks and sediments, in situ, are unknown. Limited spectrophotometric data obtained in the laboratory, but of samples removed from their environment, indicate that there may be less distinctive spectral character in the ultraviolet than at the longer wavelengths. Spectral reconnaissance studies in the near-ultraviolet region are therefore warranted.

Book excerpt: Photophysiology: Current Topics in Photobiology and Photochemistry, Volume VI is a collection of papers that discusses photobiological phenomena found on cells of organisms. The papers in this collection deal with specialized areas of photobiology. One paper describes the instruments used in measuring the course of chlorophyll fluorescence in vivo that occurs when a chlorophyll molecule, stimulated by a light source, returns to its ground state from a previous first singlet state, resulting in a light emission lasting for a few nanoseconds. Another paper discusses the mechanism of light-induced carotenoid synthesis in nonphotosynthetic plants, including temperature-independent photochemical reactions, which results in the organism's producing carotenoids on subsequent incubations in darkness. One paper also explains photosensitization observed in mutant cells resulting from exposure to specific wavelength of light in the presence of a natural sensitizer. This paper points out that there are four main groups of photosensitizers, namely, the hypericins, chlorophylls, porphyrins, and psoralens. This book can prove valuable for cell biologists, micro-biologists, students, and researchers involved in the fields of photobiology and photochemistry.
