Book excerpt: The book serves as a major source of information on all the cultivated oilseeds and major tree borne and minor oilseeds grown globally. Composition, characteristics, properties and utility of different oilseeds and their constituents, namely, oil, protein, carbohydrates, minerals, vitamins and Phytochemical in food and non-food sectors including medicine has been covered in detail. The book also deals with post-harvest technology and processing of oilseeds to obtain good quality products like vegetable oil and oilcakes. The processing aspects like ghani, expeller, extrusion, solvent, and SC-CO2 extraction along with the refining of oils have been discussed. Oilseeds and their quality especially, the nutritional quality of oils, oilcakes, oleo-chemicals and preparation of edible products from groundnut, soybean sesame, sunflower, Niger and coconut have been discussed and presented in the book. Anti-nutrients, when present interfere with the digestion process as also the health of humans and animals. Hence methods of reduction/removal of anti-nutrients like phenolics, protease inhibitors, ricin, glucosinolates and aflatoxins etc. have also been covered in detail in the book. Evaluation of quality is important for understanding and utilization of any commodity. Keeping this aspect in view, methods of analysis of oil, protein, sugars, minerals, vitamins and anti-nutrients have been presented in the on procedures. This book is thus is a comprehensive coverage of all aspects of oilseeds and their quality. It will be highly useful to students, researchers, producers, processors and policy planners.

Book excerpt: Global oilseeds industry is expected to expand in the future but would also constitute a platform for a variety of other products from processing waste such as protein meals and aromatic compounds. Edible Oils: Extraction, Processing, and Applications intends to present up to date technologies that are currently used for the extraction and refining of Edible Oils while proposing potential applications for its derivatives. This contribution pushes to consider market transformation driven by environmental concerns and customer’s envy to bring quality attributes, energy efficiency and waste disposal into the heart of innovation. This work is aimed at professionals and academics including researchers, engineers and managers engaged in food and green engineering disciplines and ambitions to stand as a reference for students and lecturers. The readers will find a wealth of knowledge about the fundamentals of unit operations such as extraction and separation while presenting concepts of biorefinery for product and value creation from certain edible seeds. Novelties includes novel approaches for green solvent development in extraction, and examples of life cycle assessment of production systems for certain vegetable oils comprising product, service and waste management systems. Furthermore, this book focuses attention to production, processing, and current applications of palm oil, as an important commodity in Asia and addresses global market changes and important factors that influence its future prospects.

Book excerpt: Agroforestry is an age old practice throughout the world, but its recognition as a science is nearly three decades old. The scientific and systematic research on tree-crop interactions, in India, started in late 1970's and got major support and impetus with the establishment of All India Coordinated Research Project (AICRP) on Agroforestry in 1983 by ICAR. Today AICRP on Agroforestry has its network through out the country. Under AICRP and through the individual efforts of State Agricultural Universities, location specific agroforestry systems has been recommended to suit agro-climatic zones, landholdings and economic status of the region. Though extensive research had been done till date, but it is not available to scientific world, farming communities (who are the backbone of Indian rural development), students and inquisitive readers in one manuscript. This prompted the authors to club the information on agroforestry systems and practices prevailing in India in form of book. For the sake of convenience, agroforestry systems prevailing in India have been divided into four broad sections i) Agroforestry in India ii) Agroforestry system and practices in North, West and Central India iii) Agroforestry systems and practices in East, North-East and Southern India iv) Allied topics related to Agroforestry. Section one cover topics covering agroforestry experiences, research and extension efforts done in the last 25 years in India. Section two includes 13 chapters and section three covers 14 chapters wherein agroforestry research vis-à-vis agroclimatic zones of different states of India have been discussed. The last section comprising of 8 chapters includes topics related to role of agroforestry in soil conservation, women development; management of agroforestry; modeling; rehabilitation of mine spoils and breeding of agroforestry tree species.

Available in PDF, EPUB and Kindle. Book excerpt: Fruit Oils: Chemistry and Functionality presents a comprehensive overview of recent advances in the chemistry and functionality of lipid bioactive phytochemicals found in fruit oils. The chapters in this text examine the composition, physicochemical characteristics and organoleptic attributes of each of the major fruit oils. The nutritional quality, oxidative stability, and potential food and non-foodapplications of these oils are also extensively covered. The potential health benefits of the bioactive lipids found in these fruit oils are also a focus of this text. For each oil presented, the levels of omega-9, omega-6 and omega-3 fatty acids are specified, indicating the level of health-promoting traits exhibited in each. The oils and fats extracted from fruits generally differ from one another both in terms of their major and minor bioactive constituents. The methods used to extract oils and fats as well as the processing techniques such as refining, bleaching and deodorization affect their major and minor constituents. In addition, different post-processing treatments of fruit oils and fats may alert or degrade important bioactive constituents. Treatments such as heating, frying, cooking and storage and major constituents such as sterols and tocols are extensively covered in this text. Although there have been reference works published on the composition and biological properties of lipids from oilseeds, there is currently no book focused on the composition and functionality of fruit oils. Fruit Oils: Chemistry and Functionality aims to fill this gap for researchers, presenting a detailed overview of the chemical makeup and functionality of all the important fruit oils.

Available in PDF, EPUB and Kindle. Book excerpt: The aim of this book is to update knowledge and summarise recent research on pseudocereals, particularly regarding their botanical characteristics, composition, structure, use, production, technology and impact on human health. In the last few years, pseudocereals – in particular amaranth and quinoa – have acquired increased importance (which is also due to the increased demand for gluten ]free food). Worldwide, the demand for amaranth and quinoa has risen immensely, as seen in rising prices for amaranth and quinoa. At the same time, research in all relevant fields has intensified. At present there is some confusion surrounding the term ‘pseudocereals’ and what it does and does not include, for example kiwicha which is Amaranthus caudatus or kaniwa which is Chenopodium pallidicaule. Sometimes other grains are included in the pseudocereal group like chia (Salvia hispanica L), an oleaginous seed. One of the aims of the book is to clear up some of the confusion over what is included in the group of pseudocereals. The book will include: the origin, production and utilization of pseudocereals; structure and composition of kernels; carbohydrates/fibre/bioactive compounds of kernels; proteins and amino acids of kernels; lipids of kernels; pseudocereal dry and wet milling: processes, products and applications; food uses of whole pseudocereals; pseudocereals in gluten free products; and the nutritional and health implications of pseudocereal intake.
