Only 7% of youth are currently consuming the recommended daily amounts of fruits and vegetables (Krebs-Smith & Cook, 1996). Children are required to receive some sort of schooling, thus schools are utilized as a prime location in the United States for nutrition and health education. It has been found that exposure to and knowledge about food items, such as fruits and vegetables, results with increased intake (Ohri-Vachaspati, Turner, & Chaloupka, 2012). OBJECTIVE: The purpose of this study was to determine the effects of a nutrition education intervention with a school garden on kindergarten students' attitude and knowledge about fruits and vegetables. EXPERIMENTAL DESIGN: A five-week quasi-experimental study design was used. Three kindergarten classrooms from the same school participated in the study: a control, an education only, and an education with a garden. A total of 62 kindergarten students made up the convenience sample for this study. The study was conducted during April and May of 2013 at Parrish Elementary School in Carbondale, Illinois. The intervention classrooms experienced a half hour nutrition education intervention twice a week, for five weeks. The intervention lessons were based on the Fresh from the Farm curriculum, specifically for the first grade population. The classroom with the garden had an additional hour throughout the week to work and explore a growing garden. The students were given a Nutrition Knowledge Questionnaire for baseline measurement and again after the five week intervention. The students' attitude was measured using a three-point hedonic scale, while nutrition knowledge was measured using three separate matching exercises: fruits and vegetables to color, nutrients, and body parts.MAIN OUTCOME MEASURE: Independent Variables: Demographics, Nutrition Education Intervention. Seventy students and 39 parents participated in the study. Subjects were divided into two groups, treatment and control. There was a significant improvement in nutrition knowledge observed in the treatment groups from pre-test to post-test. There was a significant correlation for parents of the treatment group between nutrition knowledge and healthy food items served at home. There was a significant difference observed in the fitness assessments for fitness knowledge, cardiorespiratory endurance and flexibility in both treatment and control groups from pre-test to post-test.

Eating habits are formed at an early age, but nutrition education curriculum is not mandated in Wisconsin. Studies have shown a relationship between nutrition knowledge and self-efficacy, but little research exists on coupling nutrition education with nutrition exposure on the effect of nutrition knowledge and self-efficacy. The sample for this study was 11 third through fifth grade students at Starr Elementary in New Richmond, Wisconsin and was self-selecting. Three lessons were implemented using USDA's Serving Up MyPlate curriculum and preparation of a healthy snack in a before-school setting. Change was measured with a pre-/post-test evaluation based on lesson objectives and research questions. It was found that intervention provided change in student knowledge on nutrition and health outcomes, an increase in overall nutrition knowledge, improvements in identifying foods as nutrient dense vs. non-nutrient dense, and an increase in nutritional self-efficacy. Further research needs to be conducted with a larger, randomized sample and more lessons to determine the impact this type of education can provide.

Studies have shown that small percentages of young children consume a variety of fruits and vegetables but sizable percentages consume high-caloric, high-fat, salty snacks, carbonated beverages and sweetened fruit drinks. Some data indicates that increased caloric consumption, larger portion sizes, and lack of physical activity have contributed to the obesity epidemic in the United States. Other studies of low income families find some children in the United States undernourished due to food insecurity and lack of nutrition education. The purpose of this study was to design, implement and evaluate an educational intervention to encourage preschool children to adopt healthy eating habits based upon the recently released Dietary Guidelines for Americans 2005. It was intended to form the basis for ongoing, updated nutrition education at Jenkintown Day Nursery (JDN) for lower income children. The study design was quasi-experimental. A convenience sample of twenty-nine subjects from the prekindergarten participated in three nutrition interventions at weekly intervals. Topics covered included choosing a greater variety of foods, eating healthier snacks and having some awareness of the connection between activity level and energy needs from food. Themes for each intervention were as follows, Intervention One: The Milk Group; Intervention Two: Fruit and Vegetables; Intervention Three: Grains, Activity and Fats. During each 40 minute intervention subjects were asked to participate in activities including visual identification and categorization of different foods, listening to stories involving healthy food choices, helping to prepare healthy foods and discussions about what is and what is not a healthy food choice for meals and snacks. The subjects were given a pretest and posttest for each intervention measuring gains in knowledge. Results indicated an overall positive increase in posttest mode, median and mean scores for all three interventions. Analysis of responses by question indicated a positive increase of over 20 percentage points on one question from each intervention. For intervention one, correct responses increased in 3 out of 6 questions asked on the posttest; for intervention two, in 4 out of 6 questions; and for intervention three, in 6 out of 6 questions. Some questions in the first two interventions showed a decrease in correct responses. Results showing an overall improvement in scores for each intervention seem to indicate that children at the prekindergarten level would benefit from nutrition education, which may have a positive effect on preventing both under nutrition and obesity in older children. Findings reported here may add additional evidence that children at this level do benefit from nutrition education, empowering them to take responsibility for their own good nutrition. It is important that similar studies be done with a larger population using instruments for testing with established reliability and validity. Long-term studies would also be of benefit to the field of nutrition education, measuring the effects of starting education at the preschool level and tracking outcomes as children get older.

By implementing health education into school curriculums, children and families are given the knowledge and skills to combat childhood obesity. The process of evaluation will happen after one school year. If there is too short of time between implementation and evaluation it will cause indiscretions, so a longer period is used to make sure the results are represented accurately.

This was done in order to enc ourage and teach them how to change and modify their lifestyle behavior and eati ng patterns toward a healthier and more nutritive performance. The study was divided into two phases: assessment and intervention. The assessme nt phase involved collecting anthropometric measurements, 24-hr food recalls, ca nteen's assessment questionnaire, schools' personnel interviews, and pretest nut rition knowledge questionnaires. Whereas the intervention phase involved deliver ing eight nutrition education lessons to students over a period of eight weeks. This was examined by providing the students with 25 multiple choice questions at the end of each phase; a scoring system ranging from -1 to 1 for each question was used to determine the effectiveness of the intervention. The questions revol ved around nutrition including the importance of breakfast, healthy snacking, fr uits and vegetables, fibers, physical activity as well as the avoidance of high fat and high sugar food items. Post-test scores of the intervention group increased significantly more than the post-test scores of the control group in nine questions out of the twenty five included in the questionnaire. Eight questions showed significant increase in th e scores of both groups. Eight questions didn't show significant increase in pos t-test scores of both groups. Although this study only demonstrated moderate changes in the students' nutritio n knowledge, however, there is a need to encourage educators to integrate such p rograms in their curriculum since this may in the long term improve children's a ttitudes towards making better food choices.

The purpose of this study is to determine how nutrition education affects children's fruit and vegetable knowledge, asking behaviors, intake, and awareness of healthy and unhealthy foods. Results of this study will be pertinent to teachers and schools in similar geographical locations. This study utilized pre- and post-test experimental design. Twenty-two children participated in the study with 17 in the experimental group and five in the control. Children in the experimental group received of nutrition education one time per week for four weeks, while the control did not receive any. Findings indicate that children receiving nutrition education significantly increased their fruit and vegetable knowledge. Other results from the study showed no significant changes in fruit and vegetable consumption, ability to correctly identify "Go", "Slow", and "Whoa" foods or asking behavior in children that received nutrition education. Although further research is needed, the results of this study show that though knowledge improved, consumption did not increase.

More specifically, 10% of America's children are overweight or obese. Unhealthy food choices and a decrease in daily intake contribute to the dietary excesses and inadequacies, resulting in a myriad of health problems, including a decrease in bone mass. Research indicates that adolescent bone fractures have increased by 40% since 1970 due to this decrease in bone mass. Public health measures currently being implemented are aimed at reversing the escalating weight trend. Recent research indicates a nutrition intervention within a scholastic environment can improve children's knowledge about the nutrient content of food. Important groundwork at the toddler age is imperative to shape a child's future eating habits. This research design examined children's knowledge of calcium sources, assessed by changes in their scores on pre- and post- test asking them to identify five calcium rich foods and eight non-calcium rich foods. Subjects consisted of ten kindergarten age children from South Philadelphia who attended Trinity Elementary school. The subjects, who were not randomly selected, consisted of 5- and 6- year old children, all of which participated in the intervention. The children were from similar middle class socioeconomic backgrounds. Eight of the children were Caucasian and two were Asian-American. All ten children present chose to participate in the nutrition intervention. The pre- test was administered individually to each child, in private, as the researcher recorded the child's answers. Next, the children observed a bone decalcifying experiment, constructed animal shapes out of various foods including calcium rich item, and participated in a taste test. The post- test was then administered in the same fashion as the pre- test. Results showed a significant increase in the number of correct responses by the children after the intervention (92.3 + 0.03%) as compared to before the intervention (56.92 + 0.09%) P=0.0004. Results also demonstrated a significant increase in the correct responses for calcium-rich foods (92.00 plus or minus 0.06%) as compared to before the intervention (42.00 plus or minus 0.14%). Nutrition knowledge was consistent among all participants, suggesting that programs similar to this intervention can potentially improve dietary behavior and improve nutritional status of kindergarten age children. Future research should investigate the impact of parental modeling, and the effects of gender differences, demographics and cultural relationships to dairy intake. Furthermore, optimal hours of education utilized in a nutrition intervention should be evaluated, as well as the impact the education may have on behavior modification.

A lack of activity increases the risk of heart disease, colon and breast cancer, diabetes mellitus, hypertension, osteoporosis, anxiety and depression and others diseases. Emerging literature has suggested that in terms of mortality, the global population health burden of physical inactivity approaches that of cigarette smoking. The prevalence and substantial disease risk associated with physical inactivity has been described as a pandemic. The prevalence, health impact, and evidence of changeability all have resulted in calls for action to increase physical activity across the lifespan. In response to the need to find ways to make physical activity a health priority for youth, the Institute of Medicine's Committee on Physical Activity and Physical Education in the School Environment was formed. Its purpose was to review the current status of physical activity and physical education in the school environment, including before, during, and after school, and examine the influences of physical activity and physical education on the short and long term physical, cognitive and brain, and psychosocial health and development of children and adolescents. Educating the Student Body makes recommendations about approaches for strengthening and improving programs and policies for physical activity and physical education in the school environment. This report lays out a set of guiding principles to guide its work on these tasks. These included: recognizing the benefits of instilling life-long physical activity habits in children; the value of using systems thinking in improving physical activity and physical education in the school environment; the recognition of current disparities in opportunities and the need to achieve equity in physical activity and physical education; the importance of considering all types of school environments; the need to take into consideration the diversity of students as recommendations are developed. This report will be of interest to local and national policymakers, school officials, teachers, and the education community, researchers, professional organizations, and parents interested in physical activity, physical education, and health for school-aged children and adolescents.

Health problems once seen overwhelmingly in adults, such as type 2 diabetes, cardiovascular disease, and hypertension, are increasingly appearing in youth. Though the health of Americans has improved in many broad areas for decades, increases in obesity could erode these and future improvements. The IOM report Accelerating Progress in Obesity Prevention: Solving the Weight of the Nation recognized the importance of the school environment in addressing the epidemic and recommended making schools a focal point for obesity prevention. The development and implementation of K-12 nutrition benchmarks, guides, or standards (for a discussion of these terms, see the next section of this chapter) would constitute a critical step in achieving this recommendation. National nutrition education curriculum standards could have a variety of benefits, including the following: Improving the consistency and effectiveness of nutrition education in schools; Preparing and training teachers and other education staff to help them provide effective nutrition education; Assisting colleges and universities in the development of courses in nutrition as part of teacher certification and in updating methods courses on how to integrate nutrition education in subject-matter areas in the classroom and in materials; and Establishing a framework for future collaborative efforts and partnerships to improve nutrition education. Nutrition Education in the K-12 Curriculum: The Role of National Standards is a summary of the workshop's presentations and discussions prepared from the workshop transcript and slides. This summary presents recommendations made by individual speakers.
