Book excerpt: Excerpt from Storage for Apples and Pears: Marketing Research Report No. 924 The principal fruits requiring refrigeration for extended storage are apples and pears. Grapes also are stored extensively in some places, particularly in California. Refrigeration is used also for the precooling or short-time storage of other fruits, such as cherries, plums, and apricots. Rural electrification and automatic refrigera tion equipment are now universal, and indi vidual fruit growers or small groups of grow ers have been building cold-storage plants at or near their orchards instead of relying on large plants that serve a whole community or a large number of growers. This has been coincident with the development of better handling and packing methods. The handling methods, transportation equipment, and facili ties required for sorting and packing extended the distance that apples can be moved from orchard to the cold-storage house so that pack ing and shipping will not be under the pressure of getting the job done in a matter of a few days after picking. Having refrigeration facili ties at hand has permitted the orchardist to give his fruit optimum protection while it is awaiting packing and to employ a compara tively small crew of skilled harvesters instead of having to mobilize large crews. The skin gradually faded and shriveled after the second week. At the end Of the period the pulp Of the fruit was firm, Of good color and perfect flavor. The same variety, picked ripe, kept well for 30 days, but at the end Of a period Of 57 days had deteriorated in color and appearance externally, while the pulp was still perfect in flavor. Specimens Of the same varieties Of star apples, picked green, half-ripe and ripe were placed in refrigeration at a temperature Of 45° F. For a period Of 40 days. The same changes were Observed as in fruit held at 32° F. The deterioration was somewhat more rapid, however, and molds developed more extensively on skin abrasions. The color of the skin was better preserved at 45° than at 32° F. The texture Of the rind, however, and the texture and flavor Of the pulp were much better in the fruit held at 32° F. Book excerpt: Excerpt from Prepackaging Pears at Shipping Point Packaging pears in consumer trays at shipping point costs about cents more per pound for packaging, transport, storage, and overhead than place-packing pears in standard wood boxes. A molded-pulp pear tray and fiberboard ship ping containers to hold the packaged trays were designed. All nine of the commercially important pear sizes can be packaged in the tray. The pear tray protected pears better than three fruit trays tested. Two heat-shrinkable fihns tested as over wraps for the trays immobilized the pears and minimized skin discoloration. Although some film wrinkling occurred at time of packaging and some trays became distorted during long periods of storage, package appearance was usually satis factory and the pears were salable. In 23 transcontinental rail test shipments, hard and green pears packaged in consumer trays and packed in fiberboard shipping containers arrived in eastern markets with less bruising and discolor ation than similar pears place-packed in standard wood boxes. The trays were packed in five and six layers in the shipping containers, with pads on top to form a compression pack. The pears were held in cold storage for up to 6 months before shipment.
