Book excerpt: Obesity among the United States population has increased considerably over the last 40 years, while sleep duration has noticeably decreased. An association between sleep and obesity is evident and previous research has shown this to be true. This study aimed to examine the sleep-obesity association among UW-Stout college students through the assessment of weight status and sleep and breakfast behaviors. Three-hundred thirty-five students participated in the study through the completion of an online survey about usual sleep and breakfast behaviors and perceptions. Sleep patterns changed when school was in session and out of session relative to the week/weekend, with students sleeping the longest durations on the weekends when school was not in session. During the week 62.8% (n=209) of students sleep more when school was in session than not in session, conversely during the weekend 60.7% (n=197) slept the same when school was in session than out of session. Breakfast eating was 12% higher in the "Yes, most of the time" category when school was not in session compared to in session (33%, 21%, respectively). A difference in sleep patterns and BMI was observed between short sleep durations (6 hours) and longer sleep durations (6-6.9, 7-7.9, 8-8.9 and9 hours), with the greatest difference between 6 hours and9 hours. Responses about the importance of breakfast and sleep were found to correlate with behavior. Furthermore, the observed correlation between student behaviors and student perceptions suggest that school sleep and breakfast education programs should support improvement in students' sleep patterns and breakfast eating behaviors.

Book excerpt: Abstract: Although significant differences in eating habits were observed, no association between nutrition knowledge and dietary adequacy was demonstrated in a survey of 1930 male and female college students, which included 717 members of the national home economics honor society. Food intake data was collected by 24-hour food recall and nutrition knowledge was evaluated with a 25 item nutrition quiz. Significant differences in nutrition knowledge among honor society students, non-home economics females and non-home economics males were indicated by mean test scores of 18.2, 13.5 and 12.8 in the 3 groups respectively. However, non-home economics males scored significantly higher with respect to dietary adequacy than either of the other 2 groups. No significant relationship between adequacy of diet and knowledge of nutrition was seen for any of the 3 groups. These findings suggest that traditional nutrition education methods may not be effective in changing eating behaviors.

Book excerpt: Eating disorders are mental illnesses diagnosed by a series of behaviors andthought patterns that revolve around food choices, body weight, and physical appearance. College freshmen are a vulnerable population for eating disorders because they are in a new environment with access to different types and amounts of foods compared to which they have had previous exposure. Because eating disorders are mental illnesses, the connection of perceptions of food or eating behaviors compared to actual eating behaviors is a potentially important link in targeting and treatment of eating disorders. The purpose of this study was to determine prevalence of eating disorder symptomology in college freshmen men and women and determine the relationship of symptomology with their perception of their own eating behaviors. Participants were college freshmen between the ages of 18 and 22 years old. The participants completed the Eating Disorder Examination Questionnaire (EDE-Q) and a researcher developed perception questionnaire. The current study found significant relationships between scores of the EDE-Q and perception questionnaires for males and females separately (p [less than or equal to] .001). There was no significance found between the prevalence of eating disorder symptomatology for males and females or the perception questionnaire scores for males and females (p [less than or equal to] .05). The findings of the present study support the need for targeted eating disorder interventions for college freshmen because males and females both suffer from clinicallysignificant eating disorder symptomatology without a significant difference in one sex experiencing them at a higher rate.

Book excerpt: The growing prevalence of obesity among college-attending young adults is a major public health issue. Over one-third of U.S. college students are either overweight (23.3%) or obese (16.3%) (ACHA, 2017). This is problematic because overweight status during young adulthood is predictive of obesity in later life (Zheng et al., 2017). Thus, overweight and obese young adults face greater risk of developing chronic diseases, including more than half of the 15 leading causes of death in the U.S. The college milieu may be key to understanding obesity because it creates a distinct psychosocial context and shapes exposure to unique risks for young adults. Moreover, college students experience greater psychological distress compared to the general population, perhaps due to the stress associated with increased social and academic pressures. Given that distress has been linked with obesity and maladaptive health behaviors in prior research, enhancing psychological well-being may be an effective strategy to address the rising rates of obesity among college students. However, we still know relatively little about the distinct psychosocial and contextual risk and protective factors among this population. The purpose of this dissertation is to evaluate the contextual, psychosocial, and behavioral factors associated with obesity among college students at an ethnically diverse public university in Southern California. This will be investigated in three studies: Study 1 examines the extent to which social context and psychological distress are associated with increased odds of obesity among college students. Study 2 evaluates the role of lifestyle health behaviors in the relationship between distress and obesity. Study 3 assesses the ways that social relationships and eating habits shape comorbidity patterns in psychological distress and obesity among college students; a latent variable structural model is also used to explore these relationships. Findings from this dissertation may contribute to the limited, but growing body of literature on the nuanced relationship between psychological distress and obesity among college students. In addition, understanding how the college context distinguishes the health of this population may help campuses to create more tailored prevention and intervention programs that account for these psychosocial and contextual risk factors.

Book excerpt: The purpose of this study is to describe 1) Which eating habits were impacted by COVID-19 regulation and policy changes in Kent State University students, 2) How were eating habits impacted by COVID-19 regulation and policy changes in KSU students and 3) Have stress levels increased by COVID-19 regulation and policy changes in KSU students. There were 272 participants were male and female students at Kent State University who were >=18 years and enrolled in undergraduate classes from spring 2020-spring 2021. Exclusion criteria included those that were >26 years old, those previously diagnosed with an eating disorder, and those in a graduate or Ph.D. programs. This study is a descriptive study that distributed an electronic survey by email to the participants. The survey included eight demographic questions, 22 eating behavior questions, and 11 stress questions. Current study found that 51% (32.1±3.87) of student's had high stress from March 2020-now. It was also seen that from March 2020-May 2021 students reported increased consumption of processed and sugary foods, as well as increased snacking, snacking due to boredom, and portion size in comparison to now. These findings suggest that COVID-19 regulations and policies had an impact on KSU students eating behaviors and increased stress. Increased stress and negative eating habits due to COVID-19 regulations and policies long term effects are unknown and studies should be done to further investigate.
