Book excerpt: ABSTRACT: Carambola (Averrhoa carambola L.) fruits, also known as star fruit, are known for their unique shape. 'Arkin' is the major variety of carambola grown in Florida; it is popular because of its compact shape, which is favorable for shipping, and its natural sweetness. However, one problem at retail level is the poor appearance of the fruit. Another is the fruit is generally not as sweet as its potential. Currently carambolas are harvested at early ripeness (when color breaks or reaches 1/4 yellow) because fruit are firmer and less susceptible to mechanical injury during harvesting and shipping. But fruit harvested at the 1/2 yellow stage are known to be sweeter and have a significantly higher sugar-to-acid ratio than fruit harvested 1/4 yellow. This study was initiated to examine the potential for harvesting 'Arkin' carambola at more advanced ripeness stages using the following postharvest treatments:three color stages (1/4, 1/2, and 3/4 yellow), application of carnauba wax, ethylene, aqueous 1-methylcyclopropene (1-MCP) ethylene-action inhibitor, 1-MCP followed by ethylene, and storage at several temperatures. A price sensitivity analysis was also performed to determine the costs of adding a 1-MCP treatment to fruit produced in Florida.

Book excerpt: The Microbiological Quality of Food: Foodborne Spoilers specifically addresses the role of spoilers in food technology and how they affect the quality of food. Food spoilers represent a great challenge in food quality, determining the shelf-life of many products as they impact consumer acceptability of taste, texture, aroma, and other perceptions. Divided into four sections, the first section defines microbial spoilage of food, with special emphasis on methods for the evaluation of spoiling phenomena and the status of their regulatory framework, examining both existing regulations and possible gaps. The second section examines spoiling microorganisms, covering a range of common spoilage microorganisms, including pseudomonas, yeasts, and molds and spore formers, as well as less-common spoilers, including lactic acid bacteria and specific spoilage organisms in fish. The third section highlights spoiling phenomena within certain food types. Chapters cover dairy, fish, meat, and vegetables, and other products. The final section investigates emerging topics which point to future trends in the research of food spoilers. There is insight into microorganisms resistant to preservation, the role of biofilms in food quality, and the link between food safety and food spoilage, with a special emphasis on certain spoiling microorganisms which could be opportunistic pathogens. Written by an international team of leading authors, this book provides state-of-the-art coverage of this topic, which is essential to the shelf-life and quality of food. Provides in-depth coverage of the different spoilers which cause the deterioration of foods, including less common spoilers not covered in other publications Includes dedicated chapters covering the spoilage of specific products, making this book ideal for those working in the food industry Presents a framework for future research in the area of foodborne spoilers

Book excerpt: Horticultural sector presents many opportunities for economic development and improving livelihood of growers but several factors constrain production and limit the potential for trade of fruits and vegetables. Tephritid fruit flies constitute a major constraint. They cause enormous losses through direct feeding damage and loss of market opportunities through imposition of quarantine restrictions by importing countries to prevent entry and their establishment. In Africa, several native (Ceratitis and Dacus spp) and exotic (Bactrocera and Zeugodacus spp.) species inflict considerable losses to horticulture causing losses ranging from 30-90%. Over the past 10 years of R&D, extensive information has been generated on bioecology and management of several native and exotic fruit flies in Africa. While several specific reviews have addressed various aspects of the biology, ecology and management of economically important tephritid fruit flies; coverage of African native species has been limited largely to Bactrocera oleae and Ceratitis capitata – which are not economically important species in many Africa countries. Indeed, no book exist that have explicitly addressed economically important African fruit flies and none of the various reviews, have specifically focused on the status of the bioecology, economic impact and management of exotic and native fruit flies – including several potentially invasive Dacus species attacking vegetables - in Africa. This book consolidates this status of knowledge and socio-economic impact of various intervention techniques that are currently being applied across Africa. The timing of the book is especially pertinent due to the changing fruit fly landscape in Africa – caused by arrivals of the highly destructive alien invasives (Bactrocera dorsalis, B. zonata, and B. latifrons) - and the priorities African countries have placed recently on export of fruits and vegetables to international markets. This is an important reference material for researchers, academics and students that are keen at improving horticulture and enhancing food and nutrition security in Africa and beyond.

Book excerpt: The effects of time and temperature on the postharvest quality of fruits and vegetables are visually depicted in the Color Atlas of Postharvest Quality of Fruits and Vegetables. Through hundreds of vibrant color photographs, this unique resource illustrates how the appearance (e.g., color, shape, defects and injuries) of fruits and vegetables changes throughout their postharvest life and how storage temperature greatly contributes to critical quality changes. The book’s extensive coverage describes 37 different fruits and vegetables from different groups that were stored at five specific temperatures and photographed daily after specified elapsed periods of time. Individual fruits and vegetables from the following groups are covered: subtropical and tropical fruits pome and stone fruits soft fruits and berries cucurbitaceae solanaceous and other fruit vegetables legumes and brassicas stem, leaf and other vegetable and alliums Information is provided about each individual fruit/vegetable such as characteristics, quality criteria and composition; recommendations for storage, transport and retail; and effects of temperature on the visual and compositional quality of each individual fruit or vegetable, associated with photos of the appearance at particular times and temperatures. This visual documentation shows how important is to handle fruits and vegetables at the right temperature and what happens if the recommendations are not followed. Also shown is the importance of the initial harvest quality of the fruit/vegetable and the expected shelf life as a function of quality at harvest, storage temperature and storage time. The Color Atlas of Postharvest Quality of Fruits and Vegetables will appeal to a diverse group of food industry professionals in the areas of processing, distribution, retail, quality control, packaging, temperature control (refrigerated facilities or equipment) and marketing as a reference tool and to establish marketing priority criteria. Academic and scientific professionals in the area of postharvest physiology and technology, food science and nutrition can also use the book as a reference either for their study or in class to help students to visualize changes in the appearance of fruit/vegetables as a function of time/temperature.

Available in PDF, EPUB and Kindle. Book excerpt: The first edition of Minimally Processed and Refrigerated Fruits and Vegetables, edited by Robert C. Wiley and Fatih Yildiz, was published in 1994. At the time of publication, this was a new concept and was well-received by the scientific community. Minimally processed foods are whole plant tissues (the identity of the plant tissue is recognized by consumers), which may contain active enzymes, live tissues, and plant cells. These are some of the basics for the healthy food design. The overall function of these foods is to provide convenient (ready-to-serve, ready-to cook, free of any pesticides and contaminants),like-fresh products for food service and retail consumers. Minimally Processed and Refrigerated Foods (MPR) have been popular in many countries. The following are some of the advantages offered by MPR produce foods: 1. Ease of portion control in the food service industry 2. Lower transportation cost (all inedible portions of the produce are removed prior to transportation) 3. No waste is generated at the point of consumption 4. Utilization and recycling of the waste is much easier 5. Value-added new fruit and vegetable products and meal development is possible and easy 6. No requirement is needed for phytosanitary control during trade 7-No glycation end products formation during processing, 8.Degree of food processing is minimized for optimal health of human, the processing plant for MPR produce, which is not addressed in any other books on this topic, will be described in this second edition. Also, comparison of minimal processing technologies with other technologies was explained in the first publication and will be updated in this second edition. During the last 200 years the purpose of food processing was a-safety(sterilization, Pasteurization,1804 Nicholas Apert,Pasteur 1867), and b-prevention of deficiency diseases(Enrichments),but MPR foods provides a two new dimensions to food processing ; a-Prevention of chronic diseases(bioactive compounds) and b-Optimum health (functional foods,Superfoods,Neutraceuticals, and Medical foods) for human.
