Book excerpt: Polycyclic hydrocarbons are of interest in many fields of science: theoretical chemistry, physical chemistry, organic chemistry, dyestuff chemistry and biology. With regard to the latter, I am indebted to Dr. Regina Schoental of the Medical Research Council for the review in this present work of carcinogenesis by polycyclic hydrocarbons. This book is designed to present the facts in a simple and clear order and to derive empirical rules from them, but it does not present a com prehensive theory about polycyclic hydrocarbons. An attempt is made instead to extend classical symbolism into modern structural chemistry. Thus extensive use is made of Robinson's aromatic sextet, which is applied in an uncompromising and strict way. This quasi-classical attempt is encouraged further by such completely unexpected dis coveries as those of Dewar benzene and of the electronic asymmetry of formally symmetric hydrocarbons. How difficult it is to break away from any established way of thinking has been admirably expressed by Kekule ("Organische Chemie", 1861, Part 1, page 4, translated from the German): "All our ideas are based, to an extent much greater than we ordinarily believe, on those of our predecessors. Our accumulated experience, the notions of which our training has accustomed us to, of whatever kind they have been, influence the course of our thoughts far more than we are willing to admit; only too frequently the following of our regularly used, well trodden way of thinking leads us to overlook the simplest of correlations.

Book excerpt: Pyrolysis of Organic Molecules with Applications to Health and Environmental Issues, the 28th volume in the Techniques and Instrumentation in Analytical Chemistry series, gives a systematic and comprehensive description of pyrolysis of non-polymeric organic molecules. Pyrolysis is involved in many practical applications as well as in many common human activities, but harmful compounds can be generated in the process. The study of pyrolysis and of the formation of undesirable compounds as a result of pyrolytic processes is of considerable interest to chemists, chemical engineers, and toxicologists. Pyrolysis results for compounds not previously studied or reported Updated information from a large body of results published on pyrolysis of individual compounds or classes of compounds Information on mechanisms and kinetics of numerous pyrolytic processes

Book excerpt: Process-Induced Food Toxicants combines the analytical, health, and risk management issues relating to all of the currently known processing-induced toxins that may be present in common foods. It considers the different processing methods used in the manufacture of foods, including thermal treatment, drying, fermentation, preservation, fat processing, and high hydrostatic pressure processing, and the potential contaminants for each method. The book discusses the analysis, formation, mitigation, health risks, and risk management of each hazardous compound. Also discussed are new technologies and the impact of processing on nutrients and allergens.

Available in PDF, EPUB and Kindle. Book excerpt: This brief introduces readers to an alternative thermochemical reference system that makes it possible to use the heats of formation of organic compounds to deduce the energies that depend entirely on their structures, and which provides calculated values for most of the characteristic structures appearing in organic molecules. These structure-dependent energies are provided e.g. for selected compounds of normal and cyclic alkanes, open chain and cyclic olefins (including conjugated polyenes), alkynes, aromatic hydrocarbons and their substituted derivatives. The oxygen, sulfur and nitrogen derivatives of the above-mentioned compounds are also represented with calculated structure-dependent energies including alcohols, ethers, aldehydes and ketones, carboxylic acids, thiols, sulfides, amines, amides, heterocyclic compounds and others. Most organic reactions can be interpreted as the disappearance of certain structures and formation of others. If the structure-dependent energies are known, it can be shown how the disappearing and the newly formed structures contribute to the heat of reactions and to the driving forces. As experienced by the author, who pioneered the concept, structure dependent energies can help teachers to make organic chemistry more accessible for their students. Accordingly, the brief offers a valuable resource for all those who teach organic chemistry at universities, and for those who are learning it.

Available in PDF, EPUB and Kindle. Book excerpt: The mystery of the diffuse interstellar bands has been variously a curiosity, a co nundrum, and a nuisance for astronomers in the seven decades since the features were first noticed, but recently they have become a forefront issue in astrophysics. Ever since Paul Merrill, in a series of papers starting in 1934, pointed out the interstellar and unidentified nature of the bands, a Who's Who of twentieth century astronomers have tried their hands at solving the problem of identifying the carriers. Henry Norris Russell, Pol Swings, Otto Struve, Paul Ledoux, W. W. Morgan, Walter Adams, Jesse Greenstein, Lawrence Aller, and Gerhard Herzberg all briefly entered the stage, only to move on quickly to other problems where the chances for progress appeared more realistic. In more recent times a number of equally prominent scientists have pursued the bands, but generally only as a sideline to their real astronomical research. But in the past decade, and particularly in the past three years, the view of the search for the diffuse band absorbers as an interesting but perhaps quixotic quest has changed. Today there are several astronomers, as well as laboratory chemists, who are devoting substantial research time and resources to the problem and, as perhaps the most reliable indicator of the newly elevated status of research in this field, some research grants have now been awarded for the study of the bands.

Edited by an innovator in the field, who has gathered an international team of well-established experts, this is a comprehensive overview of the rapidly developing field of polycyclic (hetero)arenes, specifically highlighting on their molecular design and the latest synthetic procedures, as well as chemical and physical properties. Each chapter is dedicated to a specific compound class, the first eight covering polycyclic arenes, including both planar and non-planar conjugated molecules, while chapters nine to twelve deal with polycylic heteroarenes according to the heteroatoms, namely N, B, S and P. Important current and emergent applications in the field are also discussed, ranging from molecular sensors to electronic devices. The result is an essential reference for researchers in synthetic and physical organic chemistry, supramolecular chemistry, and materials science.

Available in PDF, EPUB and Kindle. Book excerpt: This textbook introduces the perturbation molecular orbital (PMO) th,eory of organic chemistry. Organic chemistry encompasses the largest body of factual information of any of the major divisions of science. The sheer bulk of the subject matter makes many demands on any theory that attempts to systematize it. Time has shown that the PMO method meets these demands admirably. The PMO method can provide practicing chemists with both a pictorial description of bonding and qualitative theoretical results that are well founded in more sophisticated treatments. The only requirements for use of the theory are high school algebra and a pencil and paper. The treatment described in this book is by no means new. Indeed, it was developed as a complete theory of organic chemistry more than twenty years ago. Although it was demonstrably superior to resonance theory and no more complicated to use, it escaped notice for two very simple reasons. First, the original papers describing it were very condensed, perhaps even obscure, and contained few if any examples. Second, for various reasons, no general account appeared in book form until 1969,* and this was still relatively inaccessible, being in the form of a monograph where molecular orbital (MO) theory was treated mainly at a much more sophisticated level. The generality of the PMO method is illustrated by the fact that all the new developments over the last two decades can be accommodated in it.
