Methods: A dietary exposure scenario with a high soy content was created based on Danish data on the diet of women (18-45 yrs) and children (4-10 yrs). The literature was searched for relevant studies for a risk assessment of isoflavones. Results: Minor changes in the intake of energy and macronutrients, and no changes to the degree of fulfilling recommended intake levels for most micronutrients were found. Health-based guidance values for genistein intake by pregnant women (unborn children) of 0.09 mg/kg bw/day and for children of 0.07 mg/kg bw/day were established. Conclusion: Estimated exposure to the isoflavone genistein from a diet with high soy content indicated a potential health concern for children and no concern for the unborn child.

Because ofits effects on brain development, iodinedeficiency is the single most preventable cause of mental retardation in the world. Therefore, the United Nations and the Heads of State of almost all the world's countries represented at the Summit for Children in 1990 adopted resolutions to eradicate the disorders induced by iodine deficiency (IDD) by the year 2000. For geological and socio-economic reasons, most of the populations affected by iodine deficiency disorders live in isolated and usually mountainous areas, in pre industrialized parts ofthe world. The problem of iodine deficiency in Europe has been greatly underestimated in the last decades. After the remarkable studies on the effects of iodine deficiency and their prevention and correction in Switzerland, IDD was generally considered no longer a significant public health problem in Europe. However, surveys carried out in the early 1980's under the auspices of the European Thyroid Association, clearly demonstrated the persistence of moderately or even severely affected areas. These surveys also highlighted the lack ofinformation about large parts ofEurope, especially its eastern part. It is only quite recently, following major changes in international relations and thanks to the support of UNICEF, WHO, the International Council for the Control of Iodine Deficiency Disorders and the European Thyroid Association, that more extensive surveys have been conducted in several parts of Europe hitherto almost unexplored. These surveys showed that most European countries were iodine deficient.

Nutrition plays a key role in GDM, whether (1) as part of an 'unhealthy' diet, which contributes to its cause, or (2) as part of changes in dietary intake, which act as the frontline treatment for GDM (sometimes supplemented with exercise and pharmacological intervention). Dietary changes, therefore, can alter the risk of developing GDM in the first place, and once GDM has emerged during pregnancy, dietary changes can mitigate the risk of developing GDM-related complications, such as macrosomia, respiratory distress, hypoglycemia and jaundice in the neonate, pre eclampsia, increased need for caesarean section and placental abruption in the mother. In this Special Issue, we aim to highlight the role of nutrition in the aetiology of GDM, whether directly or indirectly through weight gain and obesity, and in its role as a GDM treatment to lower hyperglycemia and the risk of the aforementioned complications.
