Available in PDF, EPUB and Kindle. Book excerpt: Building on A People’s History of the United States, this radical world history captures the broad sweep of human history from the perspective of struggling classes. An “indispensable volume” on class and capitalism throughout the ages—for readers reckoning with the history they were taught and history as it truly was (Howard Zinn) From the earliest human societies to the Holy Roman Empire, from the Middle Ages to the Enlightenment, from the Industrial Revolution to the end of the twentieth century, Chris Harman provides a brilliant and comprehensive history of the human race. Eschewing the standard accounts of “Great Men,” of dates and kings, Harman offers a groundbreaking counter-history, a breathtaking sweep across the centuries in the tradition of “history from below.” In a fiery narrative, he shows how ordinary men and women were involved in creating and changing society and how conflict between classes was often at the core of these developments. While many scholars see the victory of capitalism as now safely secured, Harman explains the rise and fall of societies and civilizations throughout the ages and demonstrates that history moves ever onward in every age. A vital corrective to traditional history, A People's History of the World is essential reading for anyone interested in how society has changed and developed and the possibilities for further radical progress.

The editor and authors draw on the expertise gained in the world's most competitive beer market (Germany), where many of the current technologies were first introduced. Following a look at the history of beer brewing, the book goes on to discuss raw materials, fermentation, maturation and storage, filtration and stabilization, special production methods and beermix beverages. Further chapters investigate the properties and quality of beer, flavor stability, analysis and quality control, microbiology and certification, as well as physiology and toxicology. Such modern aspects as automation, energy and environmental protection are also considered. Regional processes and specialties are addressed throughout the entire book, making this a truly global resource on brewing.

Available in PDF, EPUB and Kindle. Book excerpt: There is little doubt that today’s food industry is faced with a rapidly changing market landscape. The obvious need to continue to provide consumers with nutritious, delectable, safe, and affordable food products which are also profitable for food manufacturers, as well as the ongoing challenge of ensuring the delivery of adequate nutrition to hundreds of millions of disadvantaged people around the world, appears – at least as much as, if not more than, ever – to be at odds with the challenges posed by soaring energy and food commodity prices; fast-paced changes in consumer demographics, habits, and preferences; and the continual need to stay ahead of current and emerging food safety issues. In addition to this, the present ubiquity in the industry of terms such as functional foods, nutraceuticals, low sodium, low fat, clean label, minimal processing, and natural – to name a few – underscores yet a different dimension of the challenges faced by food processors today. On the other hand, however, the solutions of many of these challenges may, concurrently, present the food industry with unique and exciting opportunities. The processed meat industry, despite its long history and tradition, is certainly not exempt from having to face these modern challenges, nor excluded from realizing the promises of the opportunities that may lie ahead.

Available in PDF, EPUB and Kindle. Book excerpt: "The Victorian cup on my shelf--a present from my mother--reads 'Love the Giver.' Is it because the very word patronage implies the authority of the father that we have treated American women patrons and activists so unlovingly in the writing of our own history? This pioneering collection of superb scholarship redresses that imbalance. At the same time it brilliantly documents the interrelationship between various aspects of gender and the creation of our own culture."--Judith Tick, author of Ruth Crawford Seeger: A Composer's Search for American Music "Together with the fine-grained and energetic research, I like the spirit of this book, which is ambitious, bold, and generous minded. Cultivating Music in America corrects long-standing prejudices, omissions, and misunderstandings about the role of women in setting up the structures of America's musical life, and, even more far-reaching, it sheds light on the character of American musical life itself. To read this book is to be brought to a fresh understanding of what is at stake when we discuss notions such as 'elitism, ' 'democratic taste, ' and the political and economic implications of art."--Richard Crawford, author of The American Musical Landscape "We all know we are indebted to royal patronage for the music of Mozart. But who launched American talent? The answer is women, this book teaches us. Music lovers will be grateful for these ten essays, sound in scholarship, that make a strong case for the women philanthropists who ought to join Carnegie and Rockefeller as household words as sponsors of music."--Karen J. Blair, author of The Torchbearers: Women and Their Amateur Arts Associations in America

Available in PDF, EPUB and Kindle. Book excerpt: The Global Industrial Complex: Systems of Domination is a groundbreaking collection of essays by a diverse set of leading scholars who examine the entangled and evolving global array of corporate-state structures of hegemonic power—what the editors refer to as “the power complex”—that was first analyzed by C. Wright Mills in his 1956 classic work, The Power Elite. In this new volume edited by Steven Best, Richard Kahn, Anthony J. Nocella II, and Peter McLaren, the power complex is conceived as co-constituted, interdependent and imbricated systems of domination. Spreading insidiously on a global level, the transnational institutional relationships of the power complex combine the logics of capitalist exploitation and profits and industrialist norms of efficiency, control, and mass production, While some have begun to analyze these institutional complexes as separate entities, this book is unique in analyzing them as overlapping, mutually-enforcing systems that operate globally and which will undoubtedly frame the macro-narrative of the 21st century (and perhaps beyond). The global industrial complex—a grand power complex of complexes—thus poses one of the most formidable challenges to the sustainability of planetary democracy, freedom and peace today. But there can be no serious talk of opposition to it until it is more popularly named and understood. The Global Industrial Complex aims to be a foundational contribution to this emerging educational and political project.

Book excerpt: Although contemporary art may sometimes shock us, more alarming are recent attempts to regulate its display. Drawing upon extensive interviews, a broad sampling of media accounts, legal documents and his own observations of important events, sociologist Steven Dubin surveys the recent trend in censorship of the visual arts, photography and film, as well as artistic upstarts such as video and performance art. He examines the dual meaning of arresting images--both the nature of art work which disarms its viewers and the social reaction to it. Arresting Images examines the battles which erupt when artists address such controversial issues as racial polarization, AIDS, gay-bashing and sexual inequality in their work.

Available in PDF, EPUB and Kindle. Book excerpt: Debate over who has the authority to make foreign policy for the United States has been a constant feature of our political and constitutional history. In the modern era, the debate has come to be both shrill and stale: the proponents of presidential autonomy and the advocates of congressional supremacy start from mutually incompatible premises and come to predictable, and antagonistic, conclusions. The President's Authority Over Foreign Affairs argues that the best interpretation of our Constitution's distribution of foreign affairs authority resolves this irresolvable stand-off. Powell presents a traditional legal argument, giving careful weight to original understandings, early practice and considerations of institutional structure, and concludes that the Constitution vests the president with the clear authority to formulate and implement foreign policy. At the same time, the Constitution vests Congress with powers that enable it to exercise a near-absolute veto -- not on the president's foreign policy choices, but on his or her ability to carry those choices out. The resulting system of interlocking constitutional powers is faithful to the Constitution's text and to the purposes that are embodied in it. In making this argument, a variety of hotly contested issues are addressed, and Powell shows how constitutional interpretation enables us to reach satisfactory answers.
