Excerpt: ... the initial expense of installation and its great brittleness. Earthenware pumps have been tried and, I am informed, with good results, but their use is by no means general. Arsenic may obtain access to vinegar from several sources. Malt may 'contain arsenic in notable quantities, and arsenic may also be derived from the sulphuric acid used in " converting" raw grain from glucose and from caramel. The subject is fully dealt with in a report by Mr. H. Hammond Smith, M.R.C.S., to the Royal Commission on Arsenical Poisoning (Minutes of Evidence and Appendices, Vol. II., p. 246). In the report of the Commission issued in 1903, it is recommended that in no case should the amount of arsenic in any liquid food exceed '1'% th of a grain per gallon. Arsenic in excess of this proportion has, however, occasionally been found in vinegars. ' It is frequently argued that an amount of arsenic slightly in excess of the limit is of little importance in a substance such as vinegar of which only relatively small quantities are consumed. The Commission have pointed out however, in regard to vinegar and many other foods to which a similar argument might be applied, that the proper question is not how much arsenic may safely be left in a particular food, on the assumption that the food was the only one which might contain arsenic, but how the access of arsenic to all foods should be prevented as much as possible. Any special indulgence accorded to vinegar makers in the matter of arsenic could not fail to react unfavourably amongst malsters and glucose makers who would be enabled thereby to obtain a ready outlet for articles which through careless preparation contained excess of arsenic.
