Book excerpt: Abstract: Although significant differences in eating habits were observed, no association between nutrition knowledge and dietary adequacy was demonstrated in a survey of 1930 male and female college students, which included 717 members of the national home economics honor society. Food intake data was collected by 24-hour food recall and nutrition knowledge was evaluated with a 25 item nutrition quiz. Significant differences in nutrition knowledge among honor society students, non-home economics females and non-home economics males were indicated by mean test scores of 18.2, 13.5 and 12.8 in the 3 groups respectively. However, non-home economics males scored significantly higher with respect to dietary adequacy than either of the other 2 groups. No significant relationship between adequacy of diet and knowledge of nutrition was seen for any of the 3 groups. These findings suggest that traditional nutrition education methods may not be effective in changing eating behaviors.

Available in PDF, EPUB and Kindle. Book excerpt: Written and organized to be accessible to a wide range of readers, Improving America's Diet and Health explores how Americans can be persuaded to adopt healthier eating habits. Moving well beyond the "pamphlet and public service announcement" approach to dietary change, this volume investigates current eating patterns in this country, consumers' beliefs and attitudes about food and nutrition, the theory and practice of promoting healthy behaviors, and needs for further research. The core of the volume consists of strategies and actions targeted to sectors of societyâ€"government, the private sector, the health professions, the education communityâ€"that have special responsibilities for encouraging and enabling consumers to eat better. These recommendations form the basis for three principal strategies necessary to further the implementation of dietary recommendations in the United States.

Book excerpt: An introduction to the burgeoning field of food studies Popular and intellectual interest in food is on the rise. The breadth of concerns surrounding food ranges from animal welfare and climate change’s impact on food production to debates on the healthfulness of carbohydrates and fats, and fair compensation for restaurant and farm workers. Not only is there an expanding conversation about the ways in which we produce and consume our food, but there is growing attention being placed on the myriad ways in which food expresses and shapes shifting identities. Practicing Food Studies details the turn of the twenty-first century development and flourishing of food studies as a multidisciplinary field, focusing on its establishment at New York University. Food studies scholars have come from various fields such as history, sociology, economics, political science, nutrition, or public policy, but often felt limited by the conventions of their traditional discipline. Many gravitated to food studies to be able to describe and critically examine their specific areas of interest beyond the borders of academic disciplines. This volume explores the history of knowledge in which NYU Food Studies emerged, providing the opportunity to reflect on how academic fields are created and evolve as a response to institutional constraints and opportunities, the landscape of ideas, social movements, and public conversations. Practicing Food Studies is a compelling collection of essays compiling the research, ideas, and experiences of faculty members and graduates of the NYU Food Studies program—mapping the paths for intellectual and social engagement with food systems and its most urgent issues.

General Practice: The integrative approach e-book version covers the philosophy underpinning modern-day general practice, including primary and secondary prevention as well as acute and chronic disease management. This comprehensive e-book informs doctors of potential treatment and prevention options, as well as possible pitfalls, according to the growing integrative medicine evidence base. The first section of General Practice: The integrative approach e-book lays the foundations of integrative medicine while the second examines important medical conditions in a systems-based approach.
