Book excerpt: Excerpt from Production and Utilization of Milk by-Products in New Hampshire The state was divided into seven regions to coincide with the major secondary milksheds in the state. In the seven regions one dealer from each of seven size groups was selected. Size was determined by size of license held. After interviewing the sample, some adjustment for size was necessary and two dealers were omitted because they turned out to be com mission men for other processors, without their own processing facilities. The location of the sample interviewed is shown in Figure 1. The findings from ths survey form the basis for the following analysis. This representa tive sample is presumed to be typical for the dealers in the state. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Tank-Truck Assembly of Milk for New Hampshire Any techniques which reduce costs or increase efficiency in the pro duction and processing of milk are welcome to an industry which is facing growing competition for its products. Tank-truck assembly can therefore best be evaluated where it permits cost reductions to the industry as a whole and where it improves the competitive position of this industry in a particular area. There are four distinct functional operations in the sale of milk. They are: production, assembly, processing, and distribution. As so defined, pro duction is limited to the farm operations of milking and animal husbandry. Assembly is the collection from farms and delivery to the processor or dealer. Processing refers to those plant operations necessary for the bottling of who-le milk and the preparation of milk products. Distribution is the final step of getting milk and milk products into the hands of the consumers. A reduction in costs in any one of these operations may be. Retained by that sector to improve its cost position, or it may be passed forward to con sumers either as lower prices or as improved quality, or passed backward to producers as higher prices. It is necessary therefore to decide. What economies, if any, are possible from the adoption of tank handling, and to estimate how the distribution of benefits and costs between producers and dealers would influence the dairy industry in New Hampshire. Book excerpt: Excerpt from Milk and Its Products: A Treatise Upon the Nature and Qualities of Dairy Milk and the Manufacture, of Butter and Cheese The revolution in dairy practice brought about by the introduction of the centrifugal cream separator and the Babcock test for fat and by a more definite knowledge regarding the various fermentations that so greatly influence milk and the manufacture of its products, has seemed to demand the publication of a small handbook that shall give to the dairyman, and particularly to the dairy student, in simple, concise form, the principles underlying modern dairy practice. In attempting to meet this demand, I have had largely in view the needs of my own students, while still keeping in mind the general dairy reader. In the collation of the information, where so many points are still unsettled, it is of course difficult in all cases to distinguish fact from conjecture. The aim has been at all times to give the present state of knowledge as supported by the weight of evidence and the opinions of those whose authority is highest. In how far this has been successful time alone can tell. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Book excerpt: Excerpt from Investigation and Analysis of the Production, Transportation, Inspection and Distribution of Milk and Cream in New England IT has been apparent for some time that the production and distribution of milk in the New England States is not on a sound economic basis, and that there is something radically wrong with the way in which this important industry is now being conducted. It is obvious that the opportunities in the industry are far from being fully realized. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books. Not only do individual consumers use liquid milk for beverages and cooking, but food manufacturers use vast quantities of milk powder, concentrated milks, butter, and cream as raw materials for further processing. Effective quality assurance in the dairy industry is needed now more than ever. This completely revised and expanded Third Edition of Dairy Microbiology Handbook, comprising both Volume I: Microbiology of Milk and Volume II: Microbiology of Milk Products, updates the discipline’s authoritative text with the latest safety research, guidelines, and information. Pathogens have become a major issue in dairy manufacturing. Escheria coli is a concern, and milk-borne strains of Mycobacterium avium sub-sp. paratuberculosis have been identified as a possible cause of Crohn’s disease. Even little-known parasites like Cryptosporidium have caused disease outbreaks. Consequently, a hazard analysis of selected control/critical points (HACCP) in any manufacturing process has become essential to prevent the contamination of food. This volume also: -Discusses new diagnostic techniques that allow a pathogen to be detected in a retail sample in a matter of hours rather than days -Provides thorough coverage of dairy microbiology principles as well as practical applications -Includes the latest developments in dairy starter cultures and genetic engineering techniques -Offers completely updated standards for Good Manufacturing Practice Quality control and product development managers, microbiologists, dairy scientists, engineers, and graduate students will find the Third Edition of Dairy Microbiology Handbook to be a vital resource.
