Available in PDF, EPUB and Kindle. Book excerpt: Resinography is a strange new word to many people. Like all scientific terms, it is a word coined for a specific purpose: to indicate (in this case) that resins, polymers, and plastics write their own history on the molecular and other structural levels. The word indicates further that anyone trained and equipped to ask the right questions (by means of instruments and techniques) will be able to read that history. That person must have sufficient training and experience to interpret the answers, of course, and he or she needs to have the temperament of a detective. But in the end, as readers of this book will discover, one is able to identify the material, to determine its history of treatment, and to learn much about its possible field of usefulness. Obviously, the resinographer seeks to do the same thing with res ins, polymers, and plastics that the metallographer does with metals and their alloys. Often the investigative techniques and the instru ments, too, are similar, but sometimes they are decidedly different. Perhaps it would be best to say that resinography and metallographyl (and petrography as well) share a common origin, and that origin is deeply rooted in microscopy. The "grandfather" of all three "ographies" was Henry Clifton Sorby (1826-1908),2 who initiated 3 metallography and petrography, and was the first to report on the microstructure of a resin (amber, a natural fossil resin).

Book excerpt: Texture is one of the most important attributes used by consumers to assess food quality. This quality is particularly important for the growing number of semi-solid foods from sauces and dressings to yoghurt, spreads and ice cream. With its distinguished editor and international team of contributors, this authoritative book summarises the wealth of recent research on what influences texture in semi-solid foods and how it can be controlled to maximise product quality. Part one reviews research on the structure of semi-solid foods and its influence on texture, covering emulsion rheology, the behaviour of biopolymers and developments in measurement. Part two considers key aspects of product development and enhancement. It includes chapters on engineering emulsions and gels, and the use of emulsifiers and hydrocolloids. The final part of the book discusses improving the texture of particular products, with chapters on yoghurt, spreads, ice cream, sauces and dressings. With its summary of key research trends and their practical implications in improving product quality, Texture in food Volume 1: semi-solid foods is a standard reference for the food industry. It is complemented by a second volume on the texture of solid foods. Summarises the wealth of recent research on what influences texture in semi-solid foods and how it can be controlled to maximise product quality Reviews research on the structure of semi-solid foods and its influence on texture, covering emulsion rheology, the behaviour of biopolymers and developments in measurement Considers key aspects of product development and enhancement and includes chapters on engineering emulsions and gels and the use of emulsifiers and hydrocolloids

Available in PDF, EPUB and Kindle. Book excerpt: Ever since the beginning of the plastics and rubber industry, it was realized that useful products could be produced only if cer tain additives were incorporated into polymers. With the help of these additives, when physically dispersed in a polymer matrix, it has been possible to improve stability against thermal, oxidative, UV, hydrolytic and biological degradation, mechanical properties, flammability, cost, and processibility of plastics. The enormous growth of the volume of plastics consumed by modern society, and new application areas for plastics, have created a demand for new, better additives and better understanding of their functions in polymer systems. As a result of these trends there is a need for sharing of information on progress achieved in the area of polymer additives among engineers and scientists of the plastics industry and academia. This book is based on expanded and updated papers originally presented at the International Symposium on Polymer Additives, which was held in Las Vegas, Nevada, and was sponsored by the American Chemical Society, Division of Polymeric Materials Science and Engi neering. The book is divided into five parts which cover advances in various areas of polymer additives. The first part is devoted to the progress in understanding of UV degradation and stabilization of various polymers. Oxidation degradation and stabilization of plastic materials is covered in the second part. New developments in the stabilization of PVC are presented in the third part.

Keeping up with the rapid change in this area, there are 16 new contributors and 8 completely new chapters, as well as major revisions to existing chapters, making this second edition a substantially longer book.Instrumentation and sensors for the food industry 2nd edition begins with two introductory chapters to set the scene, part one covers in-line measurement of food processing operations, including colour measurement, the measurement of food composition by a range of techniques, and the measurement of pressure, temperature, level, flow and viscosity. Part two reviews instrumental techniques in the quality control laboratory, including the measurement of rheological properties, texture, water and microbiological activity. Part thee has five chapters devoted to the increasingly widespread use of electronic noses, chemosensors, biosensors, immunosensors and DNA probes. - Comprehensively revised and expanded edition of a standard work in its field - Authoritative and practical guide to the range of instrumentation and sensors available - Written by a distinguished international panel of experts
