Book Synopsis Odour and Volatile Organic Compounds by : John Kaiyun Jiang
Download or read book Odour and Volatile Organic Compounds written by John Kaiyun Jiang and published by IWA Publishing (International Water Assoc). This book was released on 2001-11 with total page 348 pages. Available in PDF, EPUB and Kindle. Book excerpt: Recently the development of odour measurement, regulation and control techniques has made great progress, with new and updated standards and regulations for odour control and measurement in Europe and Australasia; in the United States, odour was listed as one of the key areas for action by the Agricultural Air Quality Task Force. In these circumstances, it is clear that a uniform systematic approach to quantifying and solving odour problems worldwide is highly desirable. This motivated the 1st IWA International Conference on Odours and VOCs, with its focus on ?measurement, regulation and control techniques?. The conference emphasised the need to standardise the approaches to odour measurement, to quantify odour impact from various emission sources for regulatory purposes, and to devise ways of alleviating odour impact on local communities. These subjects are of concern nationally and internationally because of the decreasing tolerance to such impacts by local communities and the current lack of effective solutions. From the papers presented 42 have been selected for these proceedings, dealing with olfactometry; field observation and sampling; odour regulations; physical treatment; odour dispersion modelling; volatilisation models; animal farming odours; manure treatment; biofilters; odour control for anaerobic ponds; and H2S removal. They represent the latest work of leading experts from European, Asian, North American, Australian and New Zealand universities, agencies and organisations and will prove a major resource for all interested in the research and practice of odour measurement and control.

The book highlights the various types of crossmodal interactions, such as sound and taste, and vision and taste, showing their impact on sensory and hedonic perception, along with their consumption in the context of food and drink. The chapters in this edited volume review the existing literature, also explaining the underlying neural and psychological mechanisms which lead to crossmodal perception of flavor. The book brings together research which has not been presented before, making it the first book in the market to cover the literature of multisensory flavor perception by incorporating the latest in psychophysics and neuroscience. Authored by top academics and world leaders in the field Takes readers on a journey from the neurological underpinnings of multisensory flavor perception, then presenting insights that can be used by food companies to create better flavor sensations for consumers Offers a wide perspective on multisensory flavor perception, an area of rapidly expanding knowledge

Book Synopsis Volatile Compounds and Smell Chemicals (Odor and Aroma) of Food by : Eugenio Aprea
Download or read book Volatile Compounds and Smell Chemicals (Odor and Aroma) of Food written by Eugenio Aprea and published by MDPI. This book was released on 2021-04-29 with total page 362 pages. Available in PDF, EPUB and Kindle. Book excerpt: Among the constituents of food, volatile compounds are a particularly intriguing group of molecules, because they give rise to odor and aroma. Indeed, olfaction is one of the main aspects influencing the appreciation or dislike of particular food items. Volatile compounds are perceived through the smell sensory organs of the nasal cavity, and evoke numerous associations and emotions, even before the food is tasted. Such a reaction occurs because the information from these receptors is directed to the hippocampus and amygdala, and the key regions of the brain involved in learning and memory. In addition to identifying the odor active compounds, the analysis of the volatile compounds in food is also applicable for detecting the ripening, senescence, and decay in fruit and vegetables, as well as monitoring and controlling the changes during food processing and storage (i.e., preservation, fermentation, cooking, and packaging). I warmly invite colleagues to submit their original research or review articles covering all aspects of volatile compounds research in the food sector (excluding pesticides), and/or the analytical methods used to identify, measure, and monitor these molecules.

Book Synopsis Taste and Odour in Source and Drinking Water by : Tsair-Fuh Lin
Download or read book Taste and Odour in Source and Drinking Water written by Tsair-Fuh Lin and published by IWA Publishing. This book was released on 2018-03-15 with total page 322 pages. Available in PDF, EPUB and Kindle. Book excerpt: This book provides an updated evaluation of the characterization and management of taste and odour (T&O) in source and drinking waters. Authored by international experts from the IWA Specialist Group on Off-flavours in the Aquatic Environment, the book represents an important resource that synthesizes current knowledge on the origins, mitigation, and management of aquatic T&O problems. The material provides new knowledge for an increasing widespread degradation of source waters and global demand for high quality potable water. Key topics include early warning, detection and source-tracking, chemical, sensory and molecular diagnosis, treatment options for common odorants and minerals, source management, modelling and risk assessment, and future research directions. Taste and Odour in Source and Drinking Water is directed towards a wide readership of scientists, engineers, technical operators and managers, and presents both practical and theoretical material, including an updated version of the benchmark Drinking Water Taste and Odour Wheel and a new biological wheel to provide a practical and informative tool for the initial diagnosis of the chemical and biological sources of aquatic T&O.

Book excerpt: "Volatile organic compounds (VOCs) form a large group of chemicals commonly found in both indoor and outdoor air. They can affect air quality. While some VOCs give off distinctive odours at higher levels, they may be present even if you can't smell them. Exposure to VOCs in indoor air may affect your health, depending on which VOCs are present, the level of VOCs present, and how long you are exposed"--Page [1].
