Available in PDF, EPUB and Kindle. Book excerpt: Biotechnology is now one of the major growth areas in science and engineering and within this broad discipline enzyme technology is one of the areas earmarked for special and significant developments. This publication is the second edition of Microbial Enzymes and Biotechnol ogy which was originally published in 1983. In this edition the editors have attempted to bring together accounts (by the relevant experts) of the current status of the major areas of enzyme technology and specifically those areas of actual and/or potential commercial importance. Although the use of microbial enzymes may not have expanded at quite the rate expected a decade ago, there is nevertheless intense activity and considerable interest in the whole area of enzyme technology. Microbial enzymes have been used in industry for many centuries although it is only comparatively recently that detailed knowledge relating to their nature, properties and function has become more evident. Developments in the 1960s gave a major thrust to the use of microbial enzymes in industry. The commercial success of alkaline proteases and amyloglucosidases formed a bed-rock for subsequent research and development in the area.

Available in PDF, EPUB and Kindle. Book excerpt: R. S. SHALLENBERGER Cornell University, New York State Agricultural Research Station, New York, USA Among the material to be discussed in this first section of the 'Enzymes and Food Processing Symposium' is subject matter that can be viewed as a marriage between enzyme technology and sugar stereochemistry. In order to bring the significance of the material to be presented into proper perspective, I would like you to pretend, for a moment, that you are a researcher making a proposal on this subject to a Research Granting Agency in order to obtain financial support for your ideas. However, the year is 1880. Under the 'objectives' section of your proposal, you state that you intend to attach the intangible vital force or spirit-that is, the catalyst unique to the chemistry of living organisms-to an inert substrate such as sand. Thereafter you will pass a solution of right handed glucose (also known as starch sugar) past the 'vital force' and in the process convert it to left-handed glucose (also known as fruit sugar). The peer review committee would probably reject the proposal as sheer nonsense because the statements made were not only contrary to their experience, but also contrary to what they had been taught. Perhaps a few select people would have some feeling for what you were talking about, but commiseration would be the only form of support that they could offer.

Available in PDF, EPUB and Kindle. Book excerpt: The Fifth International Symposium on Nitrogen Fixation with Non-legumes was held in Florence (Italy) on 10-14 September, 1990. Earlier Symposia of this series were held in Piracicaba (Brazil), Banf Alberta (Canada), Helsinki (Finland) and Rio De Janeiro (Brazil). The Symposium's main objectives were to bring together scientists working in many different fields of nitrogen fixation, to stimulate discussion on this important process and to have an appraisal of the most recent studies concerning nitrogen fixation with non-legumes. The Symposium was attended by 230 scientists from 32 different countries. This volume collects the contributions of 65 lectures and 87 posters, which are an up-to-date account of the state of knowledge on biological nitrogen fixation with non-legumes. The book provides a valuable reference source not only for specialists in nitrogen fixation, but also for researchers working on related aspects of agronomy, biochemistry, genetics, microbiology, molecular biology and plant physiology. It is with great pleasure that we aknowledge the contributions of the authors in assuring the prompt pubblication of this volume. We would also like to express our thanks to Kluwer Academic Publishers B.V. for the publication of these Proceedings. M. Polsinelli R. Materassi M. Vincenzini ORGANIZING COMMITTEE President M. Available in PDF, EPUB and Kindle. Book excerpt: In the past 35 years, the use of commercial enzymes has grown from an insignificant role in the food industry to an important aspect of food processing. This Third Edition of Enzymes in Food Processing explores recent and extensive changes in the use of enzymes as well as the discovery of new enzymes and their uses. Included in the book is a history of the role of enzymes in food processing, enzyme characterization, a discussion of different classes of enzymes including lipases and proteases, commercial enzyme production, and the processing of particular foods such as meat, vegetables, fruit, baked goods, milk products, and beer. Unlike earlier editions, it provides basic information on enzymes and their uses not adequately described in the current literature. Food technologists will find in this edition a description of the properties of those enzymes that are important in food processing, as well as a description of the properties of those enzymes that are important in food processing, as well as a description of the many applications of enzymes in the foods processing industry. The book is intended for food technologists, and will be of value to the microbiologist and enzyme chemist as well. This treatise provides a comprehensive treatment of enzymes used in food processing. - Covers genetic modification of enzymes in the food industry - Discuss enzyme function and dependence on environmental parameters - Explores practical applications of food enzymes in industry

Available in PDF, EPUB and Kindle. Book excerpt: Functional Properties of Food Components reviews the roles and functions of specific components in foods. It addresses three main questions: What in the biochemical make-up of food components makes them ""tick"" in the production of desirable and acceptable foods? Why do those components/entities perform the way they do and, often, why do they fail to perform as expected? Which functions continue to be elusive and require more searching and probing? The book is organized into three parts. Part I discusses specific food components such as water, carbohydrates, corn sweeteners and wheat carbohydrates, proteins, lipids, and enzymes. Part II deals with food additives and foods of the future; and reviews the role of components in four well-established foods: dairy, wheat flour, malt, and soybean products. Part III presents the available information and documentation on food components. This book is intended for the undergraduate with a background in the general biochemistry of natural materials, but is also interested in specific information on the function of those components in foods. It is also meant for the food scientist or technologist who is familiar with food formulation and production, and for any other interested reader with an appropriate background, whether managerial or scientific.
