Book excerpt: Globally, the food system and the relationship of the individual to that system, continues to change and grow in complexity. Eating is an everyday event that is part of everyone’s lives. There are many commentaries on the nature of these changes to what, where and how we eat and their socio-cultural, environmental, educational, economic and health consequences. Among this discussion, the term "food literacy" has emerged to acknowledge the broad role food and eating play in our lives and the empowerment that comes from meeting food needs well. In this book, contributors from Australia, China, United Kingdom and North America provide a review of international research on food literacy and how this can be applied in schools, health care settings and public education and communication at the individual, group and population level. These varying perspectives will give the reader an introduction to this emerging concept. The book gathers current insights and provides a platform for discussion to further understanding and application in this field. It stimulates the reader to conceptualise what food literacy means to their practice and to critically review its potential contribution to a range of outcomes.

Available in PDF, EPUB and Kindle. Book excerpt: Unless a food is grossly contaminated, consumers are unable to detect through sight or smell the presence of low levels of toxic chemicals in their foods. Furthermore, the toxic effects of exposure to low levels of chemicals are often manifested slowly, sometimes for decades, as in the case of cancer or organ failure. As a result, safeguarding food from such hazards requires the constant monitoring of the food supply using sophisticated laboratory analysis. While the food industry bears the primary responsibility for assuring the safety of its products, the overall protection of people’s diets from chemical hazards must be considered one of the most important public health functions of any government. Unfortunately, many countries do not have sufficient capability and capacity to monitor the exposure of their populations to many potentially toxic chemicals that could be present in food and drinking water. Without such monitoring, public health authorities in many countries are not able to identify and respond to problems posed by toxic chemicals, which may harm their population and undermine consumer confidence in the safety of the food supply. From a trade perspective, those countries that cannot demonstrate that the food they produce is free of potentially hazardous chemicals will be greatly disadvantaged or even subject to sanctions in the international marketplace. The goal of a total diet study (TDS) is to provide basic information on the levels and trends of exposure to chemicals in foods as consumed by the population. In other words, foods are processed and prepared as typical for a country before they are analyzed in order to better represent actual dietary intakes. Total diet studies have been used to assess the safe use of agricultural chemicals (e.g., pesticides, antibiotics), food additives (e.g., preservatives, sweetening agents), environmental contaminants (e.g., lead, mercury, arsenic, cadmium, PCBs, dioxins), processing contaminants (e.g., acrylamide, polycyclic aromatic hydrocarbons, chloropropanols), and natural contaminants (e.g., aflatoxin, patulin, other mycotoxins) by determining whether dietary exposure to these chemicals are within acceptable limits. Total diet studies can also be applied to certain nutrients where the goal is to assure intakes are not only below safe upper limits, but also above levels deemed necessary to maintain good health. International and national organizations, such as the World Health Organization, the European Food Safety Agency and the US Food and Drug Administration recognize the TDS approach as one of the most cost-effective means of protecting consumers from chemicals in food, for providing essential information for managing food safety, including food standards, and for setting priorities for further investment and study. Total Diet Studies introduces the TDS concept to a wider audience and presents the various steps in the planning and implementation of a TDS. It illustrates how TDSs are being used to protect public health from chemicals in the food supply in many developed and developing countries. The book also examines some of the applications of TDSs to specific chemicals, including contaminants and nutrients.

Available in PDF, EPUB and Kindle. Book excerpt: Explore North Korea, one of the most secretive countries in the world. This thoughtful book provides a concise introduction to North Korea. Two leading experts, Kongdan Oh and Ralph Hassig, trace the country’s history from its founding in 1948 and describe the many facets of its political, economic, social, and cultural life. The authors illuminate a hidden nation dominated by three generations of the secretive Kim regime, a family dynasty more suited to the Middle Ages than the contemporary era. North Korea has a robust if outmoded military force, including a growing arsenal of weapons of mass destruction, to deter and defend against foreign attacks and to maintain independence and isolation from the rest of the world. The struggling economy, disconnected from the global marketplace, operates under harsh international sanctions. All North Koreans, from the highest party cadres to the youngest children living in prison camps, are essentially servants of the leader. Despite Kim Jong-un’s despotic control, the authors argue that North Korea cannot continue on its current path indefinitely. Kim treats even his closest associates harshly, and the gap is widening between his elite supporters, numbering a million or so, and the other twenty-four million North Koreans. The economic and technological gap between South Korea and North Korea is increasing as well, and younger people are becoming disenchanted as they gradually learn more about the outside world.

A detailed chronology complements these articles. South Korea-related refereed articles in the 2009 edition deal with the internal politics of the Democratic Labour Party, the origins of the nuclear industry, industrial relations in the metals sector, Cheju island as a medical tourism hub, President Lee Myung-bak as seen through political cartoons, the comfort women movement's regionalisation process and perceptions of North Korean women. Additional refereed articles analyse the reliability of North Korean survey data, the migration experience of North Korean refugees, and sports-related cooperation between the two Koreas.

Book excerpt: There is much intense interest in North Korea at present. This partly arises from questions about Korea's nuclear capability and intentions, and about the extent to which North Korea may be viewed as 'a rogue state' or part of 'the axis of evil'. In addition, however, North Korea has recently begun experimenting with reforms along Chinese lines. The vigour with which these will be pursued, and related questions about the degree of engagement, or otherwise, with South Korea are also important issues. This book provides full details of economic and political developments in North Korea since 1989 when the communist world began to change irrevocably.
