It has been reported that college students tend to practice poor dietary behaviors and experience significant weight gain during the first two years of enrollment (Brown, O'Connor & Savaiano, 2014). Establishing healthy dietary behaviors during this specific time frame may prevent excess weight gain and reduce the risk of long-term obesity related complications. Purpose/Aim: Nutrition education has been found to increase awareness of healthy food choices and positively influence self-reported dietary behavioral changes in the college population (Peterson, Duncan, Null, Roth & Gill, 2010). The purpose of this study is to compare the effectiveness of educational messages that promote intake of healthy food items versus messages that discourage intake of unhealthy food items on food selection and body weight in first year college students. Methods: The 9-month study will recruit and randomly assign 90 subjects. Thirty participants in Group A will be educated biweekly via email on healthy food behaviors to adopt. Thirty participants in Group B will be educated biweekly via email on unhealthy food behaviors to eliminate. Thirty participants in the control group will not receive any nutrition education messages. The educational component will be generated from the Dietary Guidelines for Americans 2015-2020 using the recommendations for creating a shift toward healthy eating behaviors. Pre-and post-intervention height and weight measurements and food frequency data will be obtained from all participants. Expected Results/Interpretation: The food frequency questionnaires will gather data about nutrient-dense and calorie-dense food selection. A weight trend will be collected during the 9-month intervention. The impact of different nutrition education approaches will be analyzed and compared. Conclusion/Implications: The results may help determine if different nutrition education messages influence dietary behaviors and weight status in first year college students.

This manual aims to signpost for the users the best way to measure food and nutrient intakes and to enhance their understanding of the key features, strengths and limitations of various methods. It also highlights a number of common methodological considerations involved in the selection process. Target audience comprises of individuals (policy-makers, programme managers, educators, health professionals including dietitians and nutritionists, field workers and researchers) involved in national surveys, programme planning and monitoring and evaluation in low capacity settings, as well as those in charge of knowledge brokering for policy-making.

Book excerpt: As new college students become autonomous eaters, they may independently develop behaviors related to food that fulfill both biological and cultural purposes. I report here on the results of a biocultural, mixed-methods study of 21 students' first term of college residence. Interview data and anthropometric measurements permit exploration of the interaction between a shift in participants' cultural surroundings, physical condition, and food-related thoughts and actions. Participants' goals of fulfilling their student responsibilities and maintaining social relationships predominantly dictated when, where, and what they ate, while their level of satisfaction with these behaviors was associated with whether their actions were consistent with personal definitions of "healthy." Participants who demonstrated a conscious effort to eat in a healthy manner generally expressed the highest satisfaction with their food-related behaviors, but did not all experience similar changes in their physical conditions. Because participants' goals influenced their satisfaction with their eating behaviors, they may affect participants' behaviors in the future. Continued research should investigate how the goals that individuals articulate but do not act on during this period in their life course may influence their health and behaviors later in their lives.

All of these diseases have a direct link to dietary intake. The ultimate goal of nutrition education is improved long-term health, therefore, this project determined that nutrition education, of at least eight weeks in duration, resulted in a diet that more closely reflects the RDAs for the individual's sex-age group. Three studies were conducted as part of this research. First, University of Missouri--Columbia students enrolled in Food Science and Human Nutrition 34 (FSHN 34) were sampled three times throughout the sixteen-week duration of their coursework--day one, following eight weeks of education, and following sixteen weeks of education--in the fall semester of 1996. The second study compared nutrition education students with a national cohort of similar aged participants--CSFII 1994-1996. The third study compared nutrition education students with other University of Missouri students with no nutrition education, eight weeks of nutrition education, and sixteen weeks of nutrition education in a prior semester. Each of these studies was able to show that with at least eight weeks of nutrition education, nutrient intake was significantly improved to more closely reflect the RDA. This study was unique in to the literature in two ways: (1) the focus was on nutrient intake following nutrition education and (2) students were studied once the education had been completed to determine long-term behavior change. Research has shown that positive behavior change, including a diet closely reflecting the RDA, sustained long-term will reduce the risk of nutrition-related disease states. This project demonstrated repeatedly that FSHN 34 at the University of Missouri--Columbia is able to influence positive changes in dietary behavior after eight weeks of instruction. This project also revealed that students who had completed the sixteen-week course, at least one semester previous, had their daily diet revert to one similar to students who had no nutrition education. This study has concluded that behavior change is transient. Unless the behavior change can be sustained over a longer period of time, students will not benefit from a reduction in disease risk.

METHODS: BC by BOD-POD, D by 3- Day food and activity diary (3-DFAD), and (PA) by accelerometer (A) were recorded in 31 1st year college women during their initial 20 weeks in college. RESULTS: Average energy intake (AEI), iron (I) intake significantly decreased, % kcals from protein intake (PRO) significantly increased. PRO, % kcals from carbohydrates (CHO) and average physical activity level (PAL) were the most important predictors in % body fat changes. AEI, PRO, CHO and % kcals from fat (FAT) were the most important predictors of the changes that occurred in the body mass index (BMI) after 20 weeks. CONCLUSION: Although this study indicates minimal changes after 20 weeks in the BC, D and PA, the scores indicate considerable inter-individual variability.

The purpose was to determine if participation in individualized nutrition counseling would improve body fat composition and have a positive influence upon macronutrient, carbohydrate, percentages in Division I collegiate athletes. The collected findings are to serve as a guideline for the development of individualized nutrition education counseling to increase positive changes in macronutrient distribution and decrease body fat percentages. Five athletic teams from California State University, Northridge participated in this study over the course of one academic year in a quasi-experimental design. Athletes completed two body fat measurement tests in the BOD POD, as well as two separate dietary analyses: pre and post-nutrition counseling. Subjects included 66 female (82%) and 14 male (18%) athletes. This study suggests that the CSUN varsity athlete could benefit from additional individualized nutritional counseling, particularly regarding the understanding of the role of macronutrients pre and post training.
