Menschen identifizieren sich mit dem was sie konsumieren, was beispielsweise im Bereich Ernährung durch den Sinnspruch „Man ist was man isst“ seinen Ausdruck findet. Allerdings muss sich der einzelne Konsument angesichts der zunehmenden Umweltschäden, insbesondere in Form des globalen Klimawandels, die Frage stellen, welche Auswirkungen das eigene Konsumverhalten auf die Umwelt hat. Auch der Konsum sollte sich dem Ziel einer Nachhaltigen Entwicklung unterordnen. Das gilt auch speziell für den Konsumbereich Ernährung, der einen nicht zu unterschätzenden Anteil an den globalen Kohlendioxidemissionen hat. Dabei sind nicht nur Produzenten und Händler aufgerufen aktiv zu werden, sondern im Besonderen auch die privaten Konsumenten. Dass große Teile der Bevölkerung diese Notwendigkeit einsehen, zeigt die Tandberg-Mori-Studie aus dem Jahr 2007: 33% der Befragten waren der Meinung, dass jeder Einzelne aktiv werden muss, um die Folgen der globalen Erwärmung zu reduzieren. Ob sich dieses Bewusstsein auch in den Handlungen niederschlägt, ist allerdings eine andere Frage. Das Ziel dieser Arbeit soll es sein, einen Überblick über das Themenfeld „Nachhaltiger Konsum“ im Allgemeinen und den Konsumbereich Ernährung im Speziellen zu geben. Im Fokus werden die ökologischen Auswirkungen des Ernährungsverhaltens stehen. Darüber hinaus soll am Beispiel von Tomaten untersucht werden, inwieweit bei den Konsumenten ein Bewusstsein für die Umweltwirkung von Lebensmitteln vorhanden ist und inwieweit dies das Handeln des Einzelnen beeinflusst.
