Book excerpt: Mycotoxins are secondary metabolites produced by the fungi of different species (mainly Aspergillus, Fusarium, and Penicillium), with toxic effects for humans and animals. These mycotoxins can contaminate food and feed. The European Union (EU) has established the maximum permitted or recommended levels for well-known mycotoxins in different foodstuffs. However, there are other mycotoxins that are not included in the regulations: the “emerging mycotoxins” (whose toxicity is still not clear), and the “modified or masked mycotoxins” (produced as a consequence of a detoxification strategy of the host plant of the fungus or during food processing). These mycotoxins could pose a risk and should also be taken into account. In order to assure consumers’ health, analytical methods for the accurate determination of mycotoxins in different food matrices and feeds are required. In this sense, liquid chromatography tandem mass spectrometry (LC–MS/MS) is a powerful tool for their unique identification and quantification. Moreover, the use of high-resolution mass spectrometry (HRMS) allows one to identify novel mycotoxins and targeted/untargeted approaches for study. This Special Issue compiles recent applications of LC–MS/MS in mycotoxin studies, as well as the development and validation of new analytical methods for their identification and quantification in different food matrices and feed, occurrence studies, and the biomonitoring of mycotoxins and their metabolites in biological fluids.

Book excerpt: According to the presented studies, the health condition of animals in rearing and breeding should be regularly monitored. This would allow early detection of delicate deviations in the body of clinically healthy individuals. Unfortunately, regular monitoring of the health of animals in commercial production is not performed. It follows that this type of research should be an introduction to further, more inquisitive steps. This can form the basis for further courses of action, indicating which organs or tissues field doctors or researchers should be interested in and what to pay attention to in order to find the correct answer, concerning the situation in the animal body. In the future, we should determine biomedical markers for use in precision veterinary medicine. In human medicine, this has been practiced with great success. The problem, however, is that we are getting to know more and more substances produced by mold fungi. This causes a build-up of new interpretative problems, causing health conditions (diagnosis), as well as analytical problems. To fully understand the results we need new techniques to assess toxicological and chemical hazards, including those related to undesirable substances. We need a solid knowledge of the biological pathways underlying the toxicity and tolerance to interference factors toxicological processes. We hope that the presented study will allow for a better understanding of mycotoxicoses that bother us and our animals, which will allow for more effective preventive actions.

Mycotoxins occur more frequently in areas with a hot and humid climate, favourable for the growth of molds, they can also be found in temperate zones.In comparison to monogastric species, ruminant animals are generally less susceptible to the adverse effects caused by contamination of feeds with mycotoxins because presence of rumen microflora in rumen. However, a number of mycotoxins resist rumen degradation, causing distinct clinical signs of intoxication. Dairy cattle can be exposed to different number of mycotoxins because complex feeding diet originating from different feed materials such as roughage and concentrates. Exposure of diary catte to these mycotoxins may result in unexpected health problem. Due to apre-existing negative energy balance, cows in the transition period are considered to be particularly sensitive to the exposure to feeds. The variation of mycotoxinoccurence due to different factors, including agricultural practices and climatic conditions. Aflatoxins (AFs) are found in maize and peanuts, aswell as in tree nuts and dried fruits. OTA is found mainly in cereals, but significant levels of contamination may also occur in wine, coffee, spices and dried fruits. Other products of concern are beans, roasted coffee and cocoa, malt and beer, bread and bakery products, wines and grape juices, spices, poultry meat and kidneys, pig kidneys and pork sausages. The production of secondary metabolism is the effect of Fungal metabolism Secondary metabolites, are formed from a relatively small number of branch points of primary metabolic pathways. Quantitative estimations of impacts of climate change on mycotoxin occurrence have been made recently, using predictive modelling.
