There is no real "Slovak cuisine" that would be known and used all around the world, like the Chinese or Italian. However, there are meals that you would encounter more often in Slovakia than elsewhere in the world. These delicious meals are served in most of the restaurants in Slovakia. For those who would like to prepare them by themselves at home, I wrote this traditional Slovak cookbook.

Available in PDF, EPUB and Kindle. Book excerpt: Providing a valuable overview of regionalism throughout the entire continent, Regionalism in Modern Europe combines both geographical and thematic approaches to examine the origins and development of regional movements and identities in Europe from 1890 to the present. A wide range of internationally renowned scholars from the USA, the UK and mainland Europe are brought together here in one volume to examine the historical roots of the current regional movements, and to explain why some of them - Scotland, Catalonia and Flanders, among others – evolve into nationalist movements and even strive for independence, while others – Brittany, Bavaria – do not. They look at how regional identities - through regional folklore, language, crafts, dishes, beverages and tourist attractions - were constructed during the 20th century and explore the relationship between national and subnational identities, as well as regional and local identities. The book also includes 7 images, 7 maps and useful end-of-chapter further reading lists. This is a crucial text for anyone keen to know more about the history of the topical – and at times controversial – subject of regionalism in modern Europe.

Book excerpt: World exhibitions have been widely acknowledged as important sources for understanding the development of the modern consumer and urbanized society, yet whilst the function and purpose of architecture at these major events has been well-studied, the place of food has received very little attention. Food played a crucial part in the lived experience of the exhibitions: for visitors, who could acquaint themselves with the latest food innovations, exotic cuisines and ’traditional’ dishes; for officials attending lavish banquets; for the manufacturers who displayed their new culinary products; and for scientists who met to discuss the latest technologies in food hygiene. Food stood as a powerful semiotic device for communicating and maintaining conceptions of identity, history, traditions and progress, of inclusion and exclusion, making it a valuable tool for researching the construction of national or corporate sentiments. Combining recent developments in food studies and the history of major international exhibitions, this volume provides a refreshing alternative view of these international and intercultural spectacles.

Available in PDF, EPUB and Kindle. Book excerpt: Ai Hisano exposes how corporations, the American government, and consumers shaped the colors of what we eat and even the colors of what we consider “natural,” “fresh,” and “wholesome.” The yellow of margarine, the red of meat, the bright orange of “natural” oranges—we live in the modern world of the senses created by business. Ai Hisano reveals how the food industry capitalized on color, and how the creation of a new visual vocabulary has shaped what we think of the food we eat. Constructing standards for the colors of food and the meanings we associate with them—wholesome, fresh, uniform—has been a business practice since the late nineteenth century, though one invisible to consumers. Under the growing influences of corporate profit and consumer expectations, firms have sought to control our sensory experiences ever since. Visualizing Taste explores how our perceptions of what food should look like have changed over the course of more than a century. By examining the development of color-controlling technology, government regulation, and consumer expectations, Hisano demonstrates that scientists, farmers, food processors, dye manufacturers, government officials, and intermediate suppliers have created a version of “natural” that is, in fact, highly engineered. Retailers and marketers have used scientific data about color to stimulate and influence consumers’—and especially female consumers’—sensory desires, triggering our appetites and cravings. Grasping this pivotal transformation in how we see, and how we consume, is critical to understanding the business of food.

Book excerpt: Europe remains divided between east and west, with differences caused and worsened by uneven economic and political development. Amid these divisions, the environment has become a key battleground. The condition and sustainability of environmental resources are interlinked with systems of governance and power, from local to EU levels. Key challenges in the eastern European region today include increasingly authoritarian forms of government that threaten the operations and very existence of civil society groups; the importation of locally-contested conservation and environmental programmes that were designed elsewhere; and a resurgence in cultural nationalism that prescribes and normalises exclusionary nation-building myths. This volume draws together essays by early-career academic researchers from across eastern Europe. Engaging with the critical tools of political ecology, its contributors provide a hitherto overlooked perspective on the current fate and reception of ‘environmentalism’ in the region. It asks how emergent forms of environmentalism have been received, how these movements and perspectives have redefined landscapes, and what the subtler effects of new regulatory regimes on communities and environment-dependent livelihoods have been. Arranged in three sections, with case studies from Czechia, Hungary, Lithuania, Poland, Romania and Serbia, this collection develops anthropological views on the processes and consequences of the politicisation of the environment. It is valuable reading for human geographers, social and cultural historians, political ecologists, social movement and government scholars, political scientists, and specialists on Europe and European Union politics.
