Rice is normally grown as an annual plant, although in tropical areas it can survive as a perennial crop and can produce a ratoon crop for up to 30 years. The rice plant can grow to 1 to 1.8 m tall, occasionally more depending on the variety and soil fertility. Since its origin, the spread of rice cultivation is extensive and rice is now being grown wherever water supply is adequate and ambient temperature are suitable. The rice grain is covered with a woody husk or hull, which is indigestible and is to be removed in the first step during processing for making the rice edible. Rice cultivation is well suited to countries and regions with low labor costs and high rainfall, as it is labor intensive to cultivate and requires ample water. Rice can be grown practically anywhere, even on a steep hill or mountain. The traditional method for cultivating rice is flooding the fields while, or after, setting the young seedlings. This simple method requires sound planning and servicing of the water damming and channeling, but reduces the growth of less robust weed and pest plants that have no submerged growth state, and deters vermin. While flooding is not mandatory for the cultivation of rice, all other methods of irrigation require higher effort in weed and pest control during growth periods and a different approach for fertilizing the soil. Drying is an essential step in the processing and preservation of paddy; it is the process that reduces grain moisture content to a safe level for storage. Milling is a crucial step in post production of rice. The basic objective of a rice milling system is to remove the husk and the bran layers, and produce an edible, white rice kernel that is sufficiently milled and free of impurities. India is the second largest rice producing country of the world after China. India also grows some of the finest quality aromatic rice of which basmati is the most high quality rice. Book excerpt: A study of the politics of rice in Canton, this book sheds new light on the local history of the city and illuminates how China's struggles with food shortages in the early twentieth century unfolded and the ways in which they were affected by the rise of nationalism and the fluctuation of global commerce. Author Seung-joon Lee profiles Canton as an exemplary site of provisioning, a critical gateway for foreign rice importation and distribution through the Pearl River Delta, which found its prized import, and thus its food security, threatened by the rise of Chinese nationalism. Lee argues that the modern Chinese state's attempts to promote domestically-produced "national rice" and to tax rice imported through the transnational trade networks were doomed to failure, as a focus on rice production ignored the influential factor of rice quality. Indeed, China's domestic rice promotion program resulted in an unprecedented famine in Canton in 1936. This book contends that the ways in which the Guomindang government dealt with the issue of food security, and rice in particular, is best understood in the context of its preoccupation with science, technology, and progressivism, a departure from the conventional explanations that cite governmental incompetence.

Book excerpt: Based on interdisciplinary and historical research, this dissertation is the first study of the role and significance of rice in modern Italian culture. I examine, analyze, and compare representations of rice and its shifting landscapes over time and across media, including works of literature, painting, film, photography, advertising, and television. I aim to establish which ideas and beliefs shaped the Italian understanding of the rice world from the mid-18th century to the present. I consider how depictions of rice cultivation, landscape, workers, and propaganda vary in relation to historical and sociopolitical circumstances. I also investigate the manner in which diverse arts and media effectively distort and conceal-or conversely, reveal- transnational, socio-economic, environmental, and ethical issues related to rice culture and its complex ecology. The word culture is central to my study, as I consider its two-fold meaning: starting from "culture" in the most literal sense, as in the agricultural cultivation of rice, I identify the complex historical processes involved in the discursive construction of an Italian culture of rice, and the role this culture played in shaping a broader Italian cultural and culinary identity. To maintain structural cohesion across chapters, I narrowed my focus to three critical questions: 1) How do the socioeconomic and political circumstances of the Italian nation influence the way rice and its culture are portrayed in the arts and media? 2) How, in return, are arts and media related to rice culture instrumental in advancing political discourses and ideas of ethnicity, gender, and class? 3) How does the discourse on rice contribute to tackling social and environmental issues related to rice cultivation and consumption?

In the past four decades, rice has also become a commercial crop of great importance to Mekong farmers, augmenting but not replacing its role in securing their subsistence. This book is based on collaborative research to (a) compare the current situation and trajectories of rice farmers within and between different regions of the Lower Mekong, (b) explore the value chains linking rice farmers with new technologies and input and output markets within and across national borders, and (c) understand the changing role of government policies in facilitating the on-going evolution of commercial rice farming.
