The substances in milk provide energy and antibodies that help protect against infection. Most farmers are paid for the quality and composition of their milk. Whole milk, once approved for use, is pumped into storage silos where it undergoes pasteurization, homogenization, separation, and further processing. Milk is a highly perishable commodity because it is an excellent medium for the growth of microorganisms - particularly bacterial pathogens - that can cause spoilage as well as diseases in consumers. Milk processing allows the preservation of milk for days, weeks, or months and helps to reduce food-borne illness.

However, unlike the fact that agricultural knowledge and information play a significant role in improving productivity, linking producers to remunerative markets, improving competitiveness in markets, research studies on the current livestock production and productivity is lacking in most parties of the country. So this book will contribute its best by offering critically important information on the existing cattle husbandry practices, milk production, handling, processing and marketing system in one of the north most districts in the country. Furthermore, it might be a clue for designing appropriate dairy development strategies, market orientations and providing base line information for further research and development.

Book excerpt: The role of employment in poverty-reduction programmes in developing countries has received considerable attention the world over. Many new employment opportunities in many developing countries are created in the informal sector where the rate of growth may be higher than that of the formal sector. Dairy markets offer good opportunities for non-farm rural and urban employment. This may particularly be true in informal milk markets, which rely less on modern milk processing equipment and more on traditional labour-intensive technologies. The case studies from Kenya, Bangladesh and Ghana provide an opportunity to gain strategic insights into how small-scale dairy marketing and processing can contribute significantly to rural and urban employment, most of which occurs in the informal sector. The capacity for small-scale dairy processing and marketing to generate jobs in rural communities, as well as in peri-urban and urban areas, is demonstrated. Although the evidence presented here is based on simple case studies and should be taken as only indicative, it nevertheless demonstrates the strong potential for even small quantities of milk to generate employment in rural and peri-urban areas.

Available in PDF, EPUB and Kindle. Book excerpt: All over the world, governments play a part in the milk business for compelling economic reasons and not, as many assert, just because dairy farmers are numerous and organized. This book examines the role of federal, state, and local governments in the dairy economy of the United States, where major public involvement in industry began during the Great Depression. Dr. Manchester considers the conditions in the 1930s that led to government involvement, the changes that have occurred in the industry and the public role since then, and the prospects for the 1980s and beyond. He also analyzes possible alternative public dairy policies for the present and the rest of the decade. Many things have changed, points out Dr. Manchester, but the fundamental conditions that led to public involvement in the dairy industry still exist.

It provides essential food value in the form of milk and milk products to the millions of the country's inhabitants. Dairying is the major source of Income for the rural masses, as about 70% of the population comprises of small, marginal and br> Landless farmers who benefit directly from dairying activities. India has about 15% of the global cattle population, 56% of the world's buffalo population and accounts for 15-16% of the word's annual milk production. The growth in milk production is about 4%. India stands tall among the milk producing countries with an annual production of about 120 million metric tons, though the organized sector handles only about 30% of the total milk produced. The authors with their strengths of academics and research in the discipline of dairy technology have been involved in developing manpower for the dairy industry and imparting training at an Institute of National repute. This book is the result of their strong feeling of the need to compile information and integrate traditional and novel technologies that exist worldwide in the processing of liquid milk. The book has been organized in various chapters that include the history of dairy development in India, procurement and consumption pattern of milk, processing, quality assurance and packaging of fluid milk products and food safety laws. The authors hope that this work will serve the students of dairy technology in the country and also provide a ready reference to the teachers involved in shaping the human Resource needs of the Indian dairy industry.

How has California become the nation's leading dairy producer? Why have consumers preferred the real thing over artificial dairy products? This book will help readers make sense of the American dairy business, whose complexities and eccentricities so often seem to defy understanding. On the brink of far-reaching changes in federal dairy policy, it gives a much-needed account of how market forces and government intervention drive the most regulated and complicated agricultural industry in the United States. The first comprehensive book on the topic,Marketing and Pricing of Milk and Dairy Products in the U.S. considers every aspect of this complicated puzzle. Looking at dairy products from milk and yogurt to butter, cheese, and ice cream, it explains supply and demand, dairy cooperatives, federal milk marketing orders and price supports, local and state regulations, and international trade. Finally, in a clear and compelling manner, the author proposes reforms that would benefit the dairy industry, especially a move toward less regulation.

It includes the set-up of the Milk Marketing Board; the Board's role in improving milk collections, told with humorous anecdotes gleaned from the author's own experience; and the sad demise of an operation that Bert considered to have been the lifeline of the industry for over 60 years. The book also looks at the regulations that were brought in over the years to remove the health hazards from drinking milk and details the arrival of Artificial Insemination, including some of the risque stories and poems told about the AI men. With illustrations, photographs of milking machines and processing plants and case studies, A Brief History of Milk Production will appeal to farmers, and in particular to dairy farmers, and those with an interest generally in rural/farming history.
