In other words, a nation that consumes milk liberally is bound to be a healthy, virile, and productive nation. "The Chinese, Japanese, and the peoples of the tropics generally have employed the leaves of plants as almost their sole protective food. They are characterized by small stature, relatively short span of life, high infant mortality, and by continued adherence to the employment of the simple mechanical inventions of their forefathers." It is said that the Japanese child, fed without cow's milk, requires two or three years longer than the American to reach maturity, while the Japanese farmer of 60 corresponds in health and vigor to the American of 80 years of age. Several diseases which afflict mankind are known to be caused by a faulty diet. Beri-beri, prevalent in the Orient among peoples subsisting almost entirely on degerminated grains, and characterized by extreme nervous debility and degeneration, disappears when protective foods are added to the diet. Pellagra, which is common in localities where the diet is poor, especially where meal made from degerminated corn is used as the chief food, is practically unknown in regions where the protective foods are consumed in liberal amounts. Scurvy appears only among people restricted to a diet of preserved foods devoid of fresh fruits, vegetables, milk, and fresh meat. Rickets is common among the children of the very poor who live on a diet of degerminated wheat, corn, and rice together with tubers and meats. It is quite possible that there is a close connection also between faulty diet and tuberculosis. McCollum says, "An examination of any large groups of people in the cities will show that where there is a high mortality from tuberculosis, milk is not being used to any great extent, and in any large group where milk purchases are large this disease is not a menace. It is well known that in institutions where tuberculosis is successfully treated milk forms the principal article of the diet of the inmates." Do we use sufficient milk in the United States? Those of poverty, bad housing, bad feeding, and neglect, may be severally recognized, but the extent of their interrelations with actual respiratory and alimentary disease - those to which the greater part of the mortality is referred - can be traced only with difficulty. It is the object Of this work to aid ln the labour of cutting away the matrix and entangling fibres and to lay bare the hidden ramifications of at least one important causative agency - epidemic diarrhoea. This affection - if we accept provisionally the more novel and generally favoured conception. As to its nature - is revealed as something very like an ordinary infectious disease, and one which permeates all classes, while the excessive mortality it gathers round itself in urban centres must be regarded as something superadded, owing to the vicious circle it forms with those baneful conditions of slum life mentioned above. On the other hand, its peculiarly intimate association with the circum stances of domestic life, from the continual faecal pollution of the interior of the household by infants and others, tends to make it more so than other affections of the kind peculiarly a class disease, and an especial scourge of dirty neighbourhoods. Dirty towns may however be saved from excessive mortality by a high percentage of breast feeding. A notable point in the interesting comparison that can be drawn between diarrhoea and typhoid fever is that, in accordance with their peculiarly opposite age-incidence curves, the marked and habitual depositing of infectious excreta within the household in the former disease may make the question of water-closet versus conservancy pan a matter of far less importance than in the latter. Then the mother is confronted with a real problem, for a milk appetite must be created by preparing it in appealing ways. With younger children good results may be obtained by allowing them to drink the milk through a straw or by changing the appearance and flavour of the milk by making special milk drinks. Stories about athletes and peo-ple who drink milk to grow strong appeal to children and are effective. Children like to be independent, and allowing the child to use his own pitcher and glass may have the desired result. For children who refuse to drink milk in any form a considerable amount can be incorporated in the child's diet by regularly serving cereals cooked in milk, vegetables, fish, chicken and meats with cream sauce, eggs poached in milk, milk desserts and cream soups. The recipes which follow give directions for making only a few of the countless number of nourishing foods and drinks which may be prepared with milk. In addition to these types of dishes, an appreciable amount of milk can be included in the meals by using it in cooking fish and meats, in making gravies and in baking bread, biscuits and cakes. In many of the recipes skim milk may be used in place of whole milk, adding butter if desirable. Evaporated milk and milk powder may also be used by reconstituting these manufactured products to fluid milk - the proportions to use are 1 cup of evaporated milk. A pound of protein from cornmeal or wheat flour is not equal to a pound of protein from milk or cheddar cheese or cot tage cheese or any kind of cheese in meeting growth needs. This is probably the most Important fact in a practical sense that farmers and the American public will have to recognize in the future. The building units from the proteins of our cereal grains are not so well suited as those from milk for rapid build-2 ing Of the protein structure of animals. It is particularly in this direction that nature did so well when through the mammary gland she constructed from the blood stream and thus indirectly from certain parts of poor proteins of the food, the proteins for the nutrition of the young. If the cereal grain proteins are used as the sole source of pro tein for the growing animal they will Show an efficiency of less than 30 per cent, while the proteins from milk will reach an efficiency of 65 per cent. In other words, while only 30 per cent Of a pound of proteins from the corn kernel would be stored away, 65 per cent of a pound from milk would be stored by the growing animal. In storing the 30 per cent of proteins from the cereal grains 70 per cent will be wasted, because it does not fit well into the growing structure of the young; but only 35 per cent of the milk proteins will be wasted.
