Book excerpt: As members of the public becomes more concious of the food they consume and its content, higher standards are expected in the preparation of such food. The updated seventh edition of Nutrient Requirements of Beef Cattle explores the impact of cattle's biological, production, and environmental diversities, as well as variations on nutrient utilization and requirements. More enhanced than previous editions, this edition expands on the descriptions of cattle and their nutritional requirements taking management and environmental conditions into consideration. The book clearly communicates the current state of beef cattle nutrient requirements and animal variation by visually presenting related data via computer-generated models. Nutrient Requirements of Beef Cattle expounds on the effects of beef cattle body condition on the state of compensatory growth, takes an in-depth look at the variations in cattle type, and documents the important effects of the environment and stress on food intake. This volume also uses new data on the development of a fetus during pregnancy to prescribe nutrient requirements of gestating cattle more precisely. By focusing on factors such as product quality and environmental awareness, Nutrient Requirements of Beef Cattle presents standards and advisements for acceptable nutrients in a complete and conventional manner that promotes a more practical understanding and application.

Available in PDF, EPUB and Kindle. Book excerpt: Given the inherent complexity of food products, most instrumental techniques employed for quality and authenticity evaluation (e.g., chromatographic methods) are time demanding, expensive, and involve a considerable amount of manual labor. Therefore, there has been an increasing interest in simpler, faster, and reliable analytical methods for assessing food quality attributes. Spectroscopic Methods in Food Analysis presents the basic concepts of spectroscopic methods, together with a discussion on the most important applications in food analysis. The determination of product quality and authenticity and the detection of adulteration are major issues in the food industry, causing concern among consumers and special attention among food manufacturers. As such, this book explains why spectroscopic methods have been extensively employed to the analysis of food products as they often require minimal or no sample preparation, provide rapid and on-line analysis, and have the potential to run multiple tests on a single sample (i.e., non-destructive). This book consists of concepts related to food quality and authenticity, that are quite broad, given the different demands of the manufacturer, the consumer, the surveillance and the legislative bodies that ultimately provide healthy and safe products.

Book excerpt: Feedstuff Evaluation contains the proceedings of the 50th University of Nottingham Easter School in Agricultural Sciences, held at Sutton Bonington in July 1989. The book presents papers discussing a wide range of topics on the accurate evaluation of feedstuffs for livestock. Initially, systems of expressing the nutritive value of feeds are considered. Modifications to feeding value as influenced by animal factors including intake and palatability are discussed. Specific dietary ingredients, being plant polysaccharides, fats, minerals and vitamins are detailed. Prediction of the nutritive value of compound feeds and individual feeds through classical wet chemistry and the more recent NIR is assuming considerable importance in the rapid evaluation of diets. Associated with these developments is an appreciation of the relevance of both inter- and intra-laboratory variation in determinations. Finally, the need to collate information into an interactive data-base is being actively pursued. It is evident that safety of animal feeds is becoming an increasingly topical issue and the last session considered the relevance of naturally-occurring toxic factors, residues, mycotoxins and, finally, animal pathogens. Veterinarians, farmers, farm administrators, and those involved in every aspect of nutrient supply to animals will find the compendium very insightful and informative.

Book excerpt: Sausages are privileged foods due to their diversity, nutritional value, deep roots in the culture of the peoples and economic importance. In order to increase the knowledge and to improve the quality and safety of these foods, an intense research activity was developed from the early decades of the past century. This book includes ten research works and a review showing important and interesting advances and new approaches in most of the research topics related to sausages. After an editorial of the Editor reflecting the aims and contents of the book, the initial five chapters deal with microbiological issues of the sausage manufacture (characterization and study of the bacterial communities of sausages, study of the metabolism and the technological and safety characteristics of concrete microbial strains, and use of starter cultures to improve the sausage quality). Chemical hazards also receive some attention in this book with a chapter on the optimization of the smoking process of traditional dry-cured meat products to minimize the presence of PAHs. The partial or total replacement of the traditional ingredients in sausages with unconventional raw materials for the obtaining of novel and varied products are the subject of three chapters. Next, a chapter is dedicated to another interesting topic, the search and the essay of natural substitutes for synthetic additives due to the increasing interest of consumers in healthier meat products. The book ends with an interesting review on the safety, quality and analytical authentication of halāl meat products, with particular emphasis on salami.

Available in PDF, EPUB and Kindle. Book excerpt: Modern Methods of Plant Analysis When the handbook Modern Methods of Plant Analysis was first introduced in 1954 the considerations were: 1. the dependence of scientific progress in biology on the improvement of ex isting and the introduction of new methods; 2. the difficulty in finding many new analytical methods in specialized jour nals which are normally not accessible to experimental plant biologists; 3. the fact that in the methods sections of papers the description of methods is frequently so compact, or even sometimes so incomplete that it is dif ficult to reproduce experiments. These considerations still stand today. The series was highly successful, seven volumes appearing between 1956 and 1964. Since there is still today a demand for the old series, the publisher has decided to resume publication of Modern Methods of Plant Analysis. It is hoped that the New Series will be just as acceptable to those working in plant sciences and related fields as the early volumes undoubtedly were. It is difficult to single out the major reasons for success of any publication, but we believe that the methods published in the first series were up-to-date at the time and presented in a way that made description, as applied to plant material, com plete in itself with little need to consult other publications. Contribution authors have attempted to follow these guidelines in this New Series of volumes.
