El Manual de buenas prcticas es un material donde el productor podr consultar, y que sirve adems de gua, sobre la aplicacin de innovaciones tecnolgicas realizadas en el Programa Integral de Capacitacin PIC- que la Organizacin para los Pueblos Indgenas y Campesinos, OPIC, A.C. desarrollo en 7 microregiones en todo lo largo del corredor pacfico Guerrerense, donde participaron ms de 800 productores ganaderos en acciones formativas como son; mdulos demostrativos y asistencia tcnica en la elaboracin de silos, bloques multinutricionales, raciones, manejo reproductivo y registros productivos. El manual est organizado en dos partes; la primera describe paso a paso el manejo integral del ganado en un centro de acopio y finalizacin bovina, y la segunda, las principales innovaciones tecnolgicas aplicadas en los ranchos ganaderos o Unidades de Produccin Pecuaria UPP- entre los que se destacan; conservacin de forrajes a travs de la elaboracin de Silos, elaboracin y aplicacin de bloques nutricionales como estrategia alimenticia en poca de secas, manejo reproductivo y registros. Para desarrollar los contenidos se obtuvo materiales de especialistas en la materia y de instituciones de investigacin y fomento como el INIFAP, siendo un documento que es el primero en editar la OPIC, es perfectible y sienta las bases para su continuidad en un segundo tomo con mayor participacin y vinculacin de los ganaderos y empresas relacionadas a la red de valor. Book excerpt: Resumen:El bienestar animal es el estado del individuo con respecto a sus tentativas por adaptarse al medio externo. En animales de producción el medio externo es impuesto por los ciclos productivos, instalaciones y manejo dado a los animales. La producción bovina de carne en Sur América es en general una de las actividades pecuarias que más vulnera el bienestar de los animales, dados algunos tratos que se han perpetuado en el quehacer de esta producción, como son los procedimientos quirúrgicos de tipo castración entre otros, sin sedación ni anestésicos, el arreo con perros y elementos contundentes e incluso eléctricos, y los procesos de embarque transporte y desembarque de manera cruenta y en altas densidades. Estas prácticas generan miedo y promueven el estado de estrés constante en los animales, lo que genera mayores dificultades en la logística operativa de la producción ganadera de carne, además de causar alteraciones directas sobre la salud de los animales y la calidad de la carne. El propósito de este trabajo es recopilar y presentar de manera clara y ordenada información actual sobre buenas prácticas de manejo en producción bovina de carne en Sur América y su importancia para garantizar altos niveles de bienestar animal, puesto que ambos aspectos juegan un papel importante al garantizar el adecuado crecimiento, desarrollo y productividad de los animales, además de traer consigo productos cárnicos de mayor calidad y valor económico. Se espera que esta monografía marque el inicio de nuevos estudios al respecto de estos temas en nuestra región e incentive a estudiantes de ciencias pecuarias, productores y consumidores a conocer las nuevas legislaciones nacionales vigentes sobre bienestar animal en la producción bovina de carne y con esto implementar buenas prácticas de manejo que garanticen alto grado de bienestar animal durante el ciclo productivo en ganado de carne en nuestro país, generando así animales en mejores condiciones de vida, procesos productivos.

The camel has long been the mainstay of pastoral societies due to its drought tolerance, reliable milk and meat supply and ability to feed on a wide variety of plants. In the last few years, however, camels are also seen more and more in semi-arid rangelands, especially where overgrazing has depleted the grasses and increased the relative importance of shrubs. In spite of this growing importance, research on camel was limited until the early seventies to studies on topics such as anatomy, physiology, behaviour and to a lesser extent disease. However, since the early eighties the interest of the research on camels has been growing. Most advances have been made in reproductive physiology, veterinary and in the biochemistry of milk, while practical oriented research on improving camel productivity by developing marketable products targeting small and middle enterprises regrettably received little attention. This book attempts to fill this gap. The authors have profound knowledge on use of the camel as milk and meat animal. This knowledge is based on results of research work carried out in partnership with universities, camel farmers and pastoralists in Eastern African countries. The first part deals with chemical composition, technological properties, hygienic safety and quality control of camel milk. This is followed by the presentation of processing methods for different dairy products which should allow smallholder producers to process milk on farm or in centralised small scale dairy unit. In the second part special knowledge gained in slaughtering, deboning and processing of camels on-site over several years of long-term stays on the Ol Maisor Farm in Kenya is presented. During the development of camel meat products the authors set a great value on the keeping quality of the products as well as creating a wide range of product groups with low and high cost for the local market and a good shelf life. The book presents background information and recipes on the manufacture of camel milk and meat products and it is intended as a practical guide to professionals, government bodies and development agencies interested in building up small scale processing units for camel meat and milk products. It is hoped that it may also serve as a reference for extension personal working with camel herders, food scientists and students. The book is concerned entirely with the one-humped camel (Camelus dromedarius). The term "camel" should, therefore, be taken to refer to this species unless specifically stated otherwise.
