Book excerpt: Livestock markets for the sale and distribution of meat developed as early as the days of colonial America. In the mid-nineteenth century, as westward expansion increased and railroads developed, stockyard companies formed in order to meet the demand of a growing nation. Contrary to markets, these companies were centrally organized and managed by a select few principal partners. America's Historic Stockyards: Livestock Hotels is an examination of such stockyards, from their early beginnings to their eventual decline. Stockyards helped to establish some of America's greatest cities. Early on the scene were stockyards in cities such as Cincinnati, otherwise known as "Porkopolis," and meat stockyards and packing powerhouse Chicago, which was considered the number one livestock market in the nation. Markets soon opened in the Midwest and eventually expanded further westward to California and Oregon. Other smaller markets made large contributions to the industry. The cow towns of Fort Worth and Wichita never reached the status of Chicago but did have large livestock receipts. Fort Worth, for instance, became the largest horse and mule market in 1915, as World War I produced an increased demand for these animals. Meatpacking moguls known as the Big Four--Phillip Armour, Gustavus Swift, Nelson Morris, and Edward Cudahy--usually financed these growing markets, controlled the meatpacking business and, in turn, the stockyards companies. Although the members changed, this oligopoly remained intact for much of the duration of the stockyards industry. However, as railways gave way to highways, the markets declined and so too did these moguls. By the end of the twentieth century, almost every major market closed, bringing an end to the stockyard era. J'Nell Pate's examination of this era, the people, and the markets themselves recounts a significant part of the history of America's meat industry.

The first in-depth, scholarly biography of this outsize character and civic booster, Amon Carter: A Lone Star Life chronicles a remarkable life and places it in the larger context of state and nation. Though best known for the Star-Telegram, Carter also established WBAP, Fort Worth’s first radio station, which in 1948 became the first television station in the Southwest. He was responsible for bringing the headquarters of what would become American Airlines to Fort Worth and for securing government funding for a local aircraft factory that evolved into Lockheed Martin. Historian Brian A. Cervantez has drawn on Texas Christian University’s rich collection of Carter papers to chart Carter’s quest to bring business and government projects to his adopted hometown, enterprises that led to friendships with prominent national figures such as Franklin D. Using the pen name "Stanton," Brown published twenty epistles in the Boston Evening Transcript detailing his observations. The South at Work is a compilation of these newspaper articles, providing a valuable snapshot of the South as it was simultaneously emerging from post–Civil War economic depression and imposing on African Americans the panoply of Jim Crow laws and customs that sought to exclude them from all but the lowest rungs of Southern society. A Harvard-educated historian and journalist originally from Alabama, Brown had been commissioned by the Evening Transcript to visit a wide range of locations and to chronicle the region with a greater depth than that of typical travelers' accounts. Some articles featured familiar topics such as a tobacco warehouse in Durham, North Carolina; a textile mill in Columbia, South Carolina; and the vast steel mills at Birmingham. However, Brown also covered atypical enterprises such as citrus farming in Florida, the King Ranch in Texas, and the New Orleans Cotton Exchange. To add perspective, he talked to businessmen and politicians, as well as everyday workers. In addition to describing the importance of diversifying the South's agricultural economy beyond cotton, Brown addressed race relations and the role of politicians such as James K. Vardaman of Mississippi, the growth of African American communities such as Hayti in Durham, and the role universities played in changing the intellectual climate of the South. Editor Bruce E. Baker has written an introduction and provided thorough annotations for each of Brown's letters. Baker demonstrates the value of the collection as it touches on racism, moderate progressivism, and accommodation with the political status quo in the South. Baker and Brown's combined work makes The South at Work one of the most detailed and interesting portraits of the region at the beginning of the twentieth century.
