Stapleton, his private secretary, indeed published two laborious works in his defence The Political Life of Canning, and the Life and Times of George Canning. The former is a successful but tedious defence of his later foreign policy, but more of the nature of a polemic than a history. The latter is a collection of letters and memoranda linked together by a most discursive and heavy commentary, golden beads indeed. But strung on the most tawdry and commonplace of threads. Stapleton knew little of Canning's life before 1815, and made no attempt to trace the connection between his earlier and later policies, whilst his argumentative and apologetic attitude did not admit of critical conclusions, broad views, or final estimates. They were heated very gradually for varying lengths of time, depending upon the character of the food. He obtained a temperature of from 190 to 200 F. (88 to 94 C.) in the center of his bottles, the maximum being 212 F. (100 He used glass exclusively, and achieved results which are difficult to surpass with all our modern equipment. In 1807, a Mr. Saddington in England described a method of preserving, the essential features of which were that the fruits be placed in glass bottles, loosely corked, put in a water bath at 165 F. (65 C.) for 1 hour, then boiling water added to cover the fruit, the corks driven in, and the bottles laid on their sides to swell the corks. He did not claim to be the originator of the method, and it is believed that the general principles were obtained by him while traveling in France. Spoiling is not due directly to the action of air or of heat and it is not simply a chemical or a physical change. When vegetable materials ferment, decay, or turn sour, the spoilage is due to the growth of certain microscopic living organisms, or germs. These all belong to the vegetable kingdom and are divided into three groups: molds, yeasts, and bacteria. Familiar exam ples of each group are the blue-green mold of spoiled fruits, the yeast used in bread making, and the bacteria of the scum, or mother, of vine gar. What we see in compressed yeast, for instance, is simply a mass consisting of millions of germs. Individual germs are too minute to be seen without a microscope. Their activities cause the molding of jellies, the swelling and souring of canned fruits, the spoiling of canned vege tables, and the putrefying of meats. The character of the material largely determines which type of spoiling will occur. Acidity is favor able to yeasts and molds. Fruits may therefore spoil by yeast fermenta tion or become moldy. Most bacteria prefer a medium with little or no acid. Decay of vegetables or meats is therefore usually due to the action of bacteria. Neither fruits nor acid vegetables are favorable to the growth of most bacteria. Yeasts, molds, and bacteria are widely distributed and occur in the air, in water, on fruits and vegetables, and in great abundance in soil and dust. Hence at the time of canning not only the fruit or vegetable but also, the sirup or brine and the containers are more or less heavily contaminated with all manner of microorganisms. Book excerpt: Excerpt from The Canning of Fishery Products: Showing the History of the Art of Canning When I began my active fishery career there were but few persons who knew much about the art of canning fishery products, and these were chary about imparting what they knew to others, who might, in time, develop into competitors. On many occasions I was approached by seekers after information along these lines, and in endeavoring to help them I soon discovered that there was not then, and the same holds true today, available any work which treated at length and fully upon the canning of fishery products, and that what little had been published was in very fragmentary shape and inaccurate in many ways. Appreciating the great need of such a work, I began some years ago to collect data for same, and an intimate connection with the fishing industry of the United States for twenty-four years - part of that time as editor of the Pacific Fisherman of Seattle, Wash., the organ of the great fisheries of the Pacific, and as a practical canner, but mainly as Field Agent of the United States Bureau of Fisheries, in the course of which I have visited, some of them many times, practically every fishing camp and packing plant in the United States proper, Alaska and Hawaii, also various plants in Canada and Mexico - greatly aided the work. Most of the processes described have been developed in the canneries, where they have stood the test of many years' actual work. The book is written for the cannery operator, and not for chemists or bacteriologists, and as a result has been made as non-technical as possible so as to be easily understood by those for whom it is written, but few of whom are versed in the sciences of chemistry and bacteriology. I am indebted to so many sources, both official and private, for information used in this work, that it is impossible to name them all, but the following were especially helpful: Dr. Hugh M. Smith, U.S. Commissioner of Fisheries; Dr. E. D. Clark, A. W. Hansen and H. D. Davi, of the U.S. Bureau of Chemistry; Frank L. Gorrell, Secretary of the National Canners' Association; Capt. E. E. Hahn, of the U.S. Bureau of Fisheries: John G. Ruge, of Apalachicola, Florida; N. B. Scofield and his assistants of the California Fish and Game Commission; and the various Superintendents of the Alaska Packers Association.
