Le risque physique étant prédominant en consommation alimentaire, cette réflexion s'intéresse particulièrement à l'étude du risque physique à court et à long terme. Cet ouvrage contribue à une meilleure compréhension des spécificités du comportement du consommateur - mangeur dans sa perception et ses stratégies de réduction du risque en phase d'achat, en repérant notamment l'influence de certains facteurs individuels (anxiété, sensibilité aux crises alimentaires, confiance en soi) dans la perception du risque alimentaire à court et/ou à long terme. Elle montre aussi l'utilité des réducteurs de risque alimentaire émis par les acteurs de la filière, ainsi que le rôle de la confiance.
