Book excerpt: Surrounded by the city of San Antonio and bisected by Texas State Highway 16, Leon Valley is known as the City of the Lions. In the early 1800s, European and Mexican immigrants homesteaded and raised their families here. Joseph Huebner, an Austrian immigrant, built a limestone house that became a stagecoach stop, providing a change of stock and overnight accommodations for weary travelers. Stories about strange noises and hauntings told by former homestead residents were thought to be related to the circumstances of his death. In the mid-1930s, a building boom attracted many to the quiet countryside. By the 1940s, dairy farming was the main occupation. From its beginnings, Leon Valley residents have chosen to preserve and celebrate its history, and concern for the well being of its citizens has remained a priority. This small community offers the advantages of a big city but retains its small-town atmosphere.

Book excerpt: 'The dream is to bring really good food at a good price to as many people as possible. It makes LEON sound like a new religion. If so, it's one that can count our judges as among its growing congregation of worshippers.' - Observer Food Monthly Awards The first Leon restaurant, in London's Carnaby Street, opened its doors in July 2004. For its founders - henry Dimbleby, John Vincent and Allegra McEvedy - the aim was to change the face of fast food, by bringing fresh, wholesome cooking to the high street. Six months later, Leon was named the Best New Restaurant in Great Britain at the Observer Food Monthly Awards. The menu is based around bold flavours, using simply-cooked fresh, local, natural ingredients with an emphasis on seasonal dishes; it also reflects how our eating habits change as the daylight house get longer and shorter. Leon Naturally Fast Food is again a book of two halves. The first half is Fast Food, which contains recipes for every occasion that take a maximum of 20 minutes to prepare: from a work day breakfast and children's meals to simple suppers and party food. The second half is Slow Fast Food which contains things that can be made in advance when you have time, to enjoy when you don't have time. There is plenty in both halves for both the experienced cook and the culinary adventurer in search of inspiration. LEON's food message is a simple and honest one - cook and eat with the best ingredients available and don't forget the naughty bits that are so necessary for a fully-rounded life.

Book excerpt: An Eater Best Cookbook of Fall 2020 • This groundbreaking new cookbook from chef, bestselling author, and TV star Marcus Samuelsson celebrates contemporary Black cooking in 150 extraordinarily delicious recipes. It is long past time to recognize Black excellence in the culinary world the same way it has been celebrated in the worlds of music, sports, literature, film, and the arts. Black cooks and creators have led American culture forward with indelible contributions of artistry and ingenuity from the start, but Black authorship has been consistently erased from the story of American food. Now, in The Rise, chef, author, and television star Marcus Samuelsson gathers together an unforgettable feast of food, culture, and history to highlight the diverse deliciousness of Black cooking today. Driven by a desire to fight against bias, reclaim Black culinary traditions, and energize a new generation of cooks, Marcus shares his own journey alongside 150 recipes in honor of dozens of top chefs, writers, and activists—with stories exploring their creativity and influence. Black cooking has always been more than “soul food,” with flavors tracing to the African continent, to the Caribbean, all over the United States, and beyond. Featuring a mix of everyday food and celebration cooking, this book also includes an introduction to the pantry of the African diaspora, alongside recipes such as: Chilled corn and tomato soup in honor of chef Mashama Bailey Grilled short ribs with a piri-piri marinade and saffron tapioca pudding in homage to authors Michael Twitty and Jessica B. Harris Crab curry with yams and mustard greens for Nyesha Arrington Spiced catfish with pumpkin leche de tigre to celebrate Edouardo Jordan Island jollof rice with a shout-out to Eric Adjepong Steak frites with plantain chips and green vinaigrette in tribute to Eric Gestel Tigernut custard tart with cinnamon poached pears in praise of Toni Tipton-Martin A stunning work of breadth and beauty, The Rise is more than a cookbook. It’s the celebration of a movement.

Book excerpt: Travel through time and experience the gastronomic history of Hill Valley with this colorful cookbook inspired by the Back to the Future trilogy. Hill Valley may have changed a lot over the years, but the idyllic town of the beloved Back to the Future movies is a treat to visit in any time period. Divided into five chapters, this quirky cookbook explores the complicated history of Hill Valley through the best possible medium: food. Start your culinary journey in good ol' 1985 with some delicious American comfort food, then travel back to 1955 for some classic diner cuisine. Jump to the far future of 2015 and nosh on some dehydrated pizza. Things might get a little greasy in Biff’s alternative, dystopian 1985, but the hardy frontier food of 1885 will keep you going through shoot-outs, train robberies, and whatever else the Wild West has to throw at you. Featuring full-color photography, alternative ingredient suggestions, and helpful notes from some of your favorite characters (Hi, Doc!), this time-hopping, genre-defying cookbook is the perfect gift for foodies, home cooks, and Back to the Future fans of all ages!

Book excerpt: Today the Santa Clara Valley is known as the Silicon Valley. However, not so long ago it was called the "Valley of Heart's Delight". Lisa Prince Newman grew up in that special time and place, among the fruit and nut orchards that surrounded her home town of Saratoga. She discovered her love for baking with the bounty of fruit ripening just outside her family's kitchen door. Lisa's passion for apricots fills this book with recipes that showcase the singular flavor and surprising versatility of the California apricot. Deeply influenced by the Santa Clara Valley's natural beauty and agricultural heritage, Lisa celebrates the apricot, its people, and its history in this very personal cookbook. For the Love of Apricots showcases 68 recipes from Breakfast to Cocktails that show you how to enjoy apricots throughout the year. A unique cookbook/memoir, For the Love of Apricots is a tribute to the orchardists and farmers who continue to grow California's most wonderful fruit.

Book excerpt: In Leon: Ingredients and Recipes, award-winning chef and cookery writer Allegra McEvedy shares the Leon principles, which through food and the environment in which we eat it aim to help people be happier and live longer. Bold, fun, friendly and bursting at the seams with information, this book will make you laugh out loud and above all make you want to cook and eat. This is a book of two halves. The Ingredients Book arms you with everything you need to know about the basic building blocks of any recipe. LEON chooses its ingredients above all for their flavor and healthfulness but also with a view to the world we live in, so that such shark-infested waters as sustainable fish are tackled and easy to navigate. LEON's top 250 fruits, vegetables, fish, meats, dairy ingredients and pantry staples are all given their own entries. Nutrition, a bit of history, flavor and the best way to get the most out of them are all covered, seasoned with a fair amount of random miscellany. The second half is The Recipe Book, where you can put your newly found knowledge of ingredients to great use with over 140 recipes: some are familiar favorites taken from LEON's menus such as the Original Superfood Salad, Moroccan Meatballs or Magic Mackerel Couscous and, for LEON Lovers everywhere, at last a recipe for the coveted LEON Better Brownie. Plus there are some recipes from the founders, their friends and those who helped make LEON what it is today, like Fred's Millennium Octopus and David Dimbleby's Spanish Omelet. LEON's food message is a simple and honest one - cook and eat with the best ingredients available and don't forget the naughty bits that are so necessary for a fully-rounded life.
