Book excerpt: From the award-winning author of Small Island, “a bittersweet exploration of an outsider’s experience of British culture” (Bookmarks). Faith Jackson knows little about her parents’ lives before they moved to England. Happy to be starting her first job in the costume department at BBC television, and to be sharing a house with friends, Faith is full of hope and expectation. But when her parents announce that they are moving “home” to Jamaica, Faith’s fragile sense of her identity is threatened. Angry and perplexed as to why her parents would move to a country they so rarely mention, Faith becomes increasingly aware of the covert and public racism of her daily life, at home and at work. At her parents’ suggestion, in the hope it will help her to understand where she comes from, Faith goes to Jamaica for the first time. There she meets her Aunt Coral, whose storytelling provides Faith with ancestors, whose lives reach from Cuba and Panama to Harlem and Scotland. Branch by branch, story by story, Faith scales the family tree, and discovers her own vibrant heritage, which is far richer and wilder than she could have imagined. “Levy has chosen her title shrewdly: like the lemon, her loaded satire is bright and alluring, but its bite is sharp.” —Booklist “Levy’s raw sense of realism and depth of feeling infuses every line.” —Elle “Bright and inventive . . . Levy’s command of voices, whether English or Jamaican, is fine, fresh and funny.” —The Observer

Available in PDF, EPUB and Kindle. Book excerpt: Seminar paper from the year 2002 in the subject Food Technology, grade: B+, César Ritz Colleges (Hotel Management School), language: English, abstract: It is not very clear where the lemon has its origin. Citrus fruits have been cultivated in southern China and Southeast Asia for approximately 4000 years (apparently a lemon-shaped earring was found in the Indus-valley dating back to 2500 BC). Between 400 and 600 BC the lemon (the scientific name of the tree is Citrus lemon) was introduced into the Middle East, one can find old Oriental stories where this fruit is mentioned. It were Arab traders in Asia who brought then around AD100 and 700 citrus fruits into Eastern Africa and the Middle East, after that they planted lemons in the Sahara, Andalusia and Sicily, bringing the lemon to Southern Europe during their occupation of Spain (in Pompeii a mosaic was found showing a lemon, but botanists argue that it became popular first in the Middle Ages probably through crusaders). Christopher Columbus carried the fruit then into the new discovered continent, known as America, where it spread rapidly. Portuguese traders came back to Europe with new varieties from Southeast Asia in the 16th century. 2 centuries later then, citrus fruits had been distributed and known all over the world. In the 1890s physicians discovered that drinking juice of citrus fruits could cure scurvy, a vitamin deficiency disease. Further efforts by scientists resulted in the knowledge that this juice had positive effects because of its high vitamin C content. Furthermore there are other substances present such as vitamin A, vitamin B and some other minerals beneficial for the human body. People used lemons for flavouring foods and drinks, bleaching printings on cotton, production of perfume as well as medicine. Even before that lemons were used, for example the ladies of Louis XIV`s court reddened their lips with lemons or to express wealth. All these new discoveries of the positive effects of lemons made the fruit popular. Today about 25% of the world′s lemon production is raised in the United States, mostly in southern and central California (the earliest lemon-record in America is from 1493 in Haiti when Columbus arrived). Available in PDF, EPUB and Kindle. Book excerpt: In south India in 1896, ten-year old Sivakami is about to embark on a new life. Hanumarathnam, a village healer with some renown as an astrologer, has approached her parents with a marriage proposal. In keeping with custom, he provides his prospective in-laws with his horoscope. The problem is that his includes a prediction, albeit a weak one, that he will die in his tenth year of marriage. Despite the ominous horoscope, Sivakami’s parents hesitate only briefly, won over by the young man and his family’s reputation as good, upstanding Brahmins. Once married, Sivikami and Hanumarathnam grow to love one another and the bride, now in her teens, settles into a happy life. But the predictions of Hanumarathnam’s horoscope are never far from her new husband’s mind. When their first child is born, as a strategy for accurately determining his child’s astrological charts, Hanumarathnam insists the midwife toss a lemon from the window of the birthing room the moment his child appears. All is well with their first child, a daughter, Thangam, whose birth has a positive influence on her father’s astrological future. But this influence is fleeting: when a son, Vairum, is born, his horoscope confirms that his father will die within three years. Resigned to his fate, Hanumarathnam sets himself to the unpleasant task of readying his household for his imminent death. Knowing the hardships and social restrictions Sivakami will face as a Brahmin widow, he hires and trains a servant boy called Muchami to help Sivakami manage the household and properties until Vairum is of age. When Sivakami is eighteen, Hanumarathnam dies as predicted. Relentless in her adherence to the traditions that define her Brahmin caste, she shaves her head and dons the white sari of the widow. With some reluctance, she moves to her family home to raise her children under the protection of her brothers, but then realizes that they are not acting in the best interests of her children. With her daughter already married to an unreliable husband of her brothers’ choosing, and Vairum’s future also at risk, Sivakami leaves her brothers and returns to her marital home to raise her family. With the freedom to make decisions for her son’s future, Sivakami defies tradition and chooses to give him a secular education. While her choice ensures that Vairum fulfills his promise, it also sets Sivakami on a collision course with him. Vairum, fatherless in childhood, childless as an adult, rejects the caste identity that is his mother’s mainstay, twisting their fates in fascinating and unbearable ways.

Available in PDF, EPUB and Kindle. Book excerpt: From fresh seafood to luxurious pasta and heavenly desserts—using lemons and limes in your cooking will make your food sing. A squeeze of lemon juice can bring a dull sauce or lacklustre soup to life as its tartness cuts through and brings out flavor in a subtler (and healthier) way than salt. Smaller, sharper, but more intensely fragrant than lemons, limes work best with exotic, spicy food. Some dishes call for the sharp, clear lift of lemon, at other times the richer fragrance of lime is more appropriate. They are both perfect as an antidote to the heat of fresh chile or pungent garlic, and the best of friends to herbs and olive oil, roast meat, and freshly grilled seafood. Their brightness is also perfect in sweet, buttery desserts. Try a host of recipes including Lemon, Mushroom, and Tarragon Arancini, Pork Dumplings in Lime-leaf Broth, Oven-baked Lemon Fennel, or Lime and Chile Sweet Potatoes. Ursula also investigates the history and culture of lemons and limes, their health-enhancing benefits, and explains how to grow your own.

Book excerpt: Winner of the 2015 James Beard Award for Best Beverage Book and the 2015 IACP Jane Grigson Award. A revolutionary approach to making better-looking, better-tasting drinks. In Dave Arnold’s world, the shape of an ice cube, the sugars and acids in an apple, and the bubbles in a bottle of champagne are all ingredients to be measured, tested, and tweaked. With Liquid Intelligence, the creative force at work in Booker & Dax, New York City’s high-tech bar, brings readers behind the counter and into the lab. There, Arnold and his collaborators investigate temperature, carbonation, sugar concentration, and acidity in search of ways to enhance classic cocktails and invent new ones that revolutionize your expectations about what a drink can look and taste like. Years of rigorous experimentation and study—botched attempts and inspired solutions—have yielded the recipes and techniques found in these pages. Featuring more than 120 recipes and nearly 450 color photographs, Liquid Intelligence begins with the simple—how ice forms and how to make crystal-clear cubes in your own freezer—and then progresses into advanced techniques like clarifying cloudy lime juice with enzymes, nitro-muddling fresh basil to prevent browning, and infusing vodka with coffee, orange, or peppercorns. Practical tips for preparing drinks by the pitcher, making homemade sodas, and building a specialized bar in your own home are exactly what drink enthusiasts need to know. For devotees seeking the cutting edge, chapters on liquid nitrogen, chitosan/gellan washing, and the applications of a centrifuge expand the boundaries of traditional cocktail craft. Arnold’s book is the beginning of a new method of making drinks, a problem-solving approach grounded in attentive observation and creative techniques. Readers will learn how to extract the sweet flavor of peppers without the spice, why bottling certain drinks beforehand beats shaking them at the bar, and why quinine powder and succinic acid lead to the perfect gin and tonic. Liquid Intelligence is about satisfying your curiosity and refining your technique, from red-hot pokers to the elegance of an old-fashioned. Whether you’re in search of astounding drinks or a one-of-a-kind journey into the next generation of cocktail making, Liquid Intelligence is the ultimate standard—one that no bartender or drink enthusiast should be without.
