La démarche permettant l'obtention, la régularité et l'amélioration de la qualité des produits doit s'appuyer sur deux éléments indissociables : la mise au point et le respect de procédures techniques, mais aussi l'optimisation de la ressource humaine de l'entreprise. L'observation des pratiques dans une douzaine d'entreprises vendéennes fait ressortir de notables différences entre le discours et la réalité. Si le volet technique de la démarche qualité est de mieux en mieux maîtrisé, la Ressource humaine semble insuffisamment prise en compte pour que les actions menées constituent une véritable marché en avant de la qualité.
