Book excerpt: The United States produces about 1.8 million tons of sugar annually. Approximately 75 per cent of this production is derived from sugar beets. The importance of the sugar beet crop in national and world economy is justification for research effort as a means to more economical production. It is desirable that sugar beet processing be carried out in the most efficient manner. More effective utilization of the sugar beet and its by-products will add stability to the sugar beet industry. For the past 170 years, since Achard found that sugar could be used for human consumption and that pulp might be fed to cattle, sugar processors have made limited use of the non-sugar constituents of the sugar beet. These materials have been disposed of almost exclusively as livestock ration supplements. The non-sugar constituents have been largely responsible for failure to extract all of the sugar from the beet (13). As a result they have been viewed with suspicion by most sugar beet processors. However, recent development suggest that the utilization of sugar beet by-products will constitute a more important phase of the sugar beet industry in the future. At this critical period in the sugar beet industry, it is difficult to overemphasize the need for a better understanding of the chemical constituents of the sugar beet and the effects of various physiological factors upon them. One of the non-sugar constituents of the sugar beet which has recently received attention is glutamic acid. This has been brought about primarily by the discovery that the salt, monosodium glutamate, has an enhancing effect upon the flavor and palatability of many foods. Using the sugar beet as almost the exclusive source of glutamic acid, a new industry (utilizing over 100 tons of beet molasses daily) has developed to manufacture and market this food seasoner (28). Preliminary investigations at the Utah Experiment Station (14) showed that of all the chemical constituents determined, glutamic acid was the most variable. This agreed with earlier work in t

S. Department of Agriculture at Albany, Calif. Was begun in July 1948. The initial program was based on the sugar beet industry's need for (a) fundamental information on which to develop new and improved processing methods, (b) methods to predict processing characteristics of various types of beets, and (c) increased efficiency and lower cost in beet sugar manufacture. Funds were made available through the Research and Marketing Act of 1946 for research at Albany as well as for contract research at institutions throughout the country, where facilities or scientists were best qualified for a particular project. Since 1958 selected research projects in foreign countries have been subsidized with funds made available from the sale of surplus crops under Public Law 480. Some sugar beet utilization research has been thus supported. From the beginning, the beet sugar industry was keenly interested in the re search program. An advisory committee of industry representatives (chemists and research directors) was formed to advise the Laboratory scientists on problems important to the industry. The committee, known as the Sugar Beet Process Advi sory Committee, was appointed by the Beet Sugar Development Foundation, Fort Collins, Colo. Its first meeting was held in 1949. Semiannual or annual meetings were held throughout the years at the Western Regional Research Laboratory or at the biannual meetings of the Merican Society of Sugar Beet Technologists. If not supplied with the material removed by the various crops or if the plant foods in the soil are not made available by the application of humus and by proper cultivation, the soil be comes worn and infertile, and the yields of all crops, including sugar beets, are greatly reduced. Quality of the soil - Soils vary widely in their original qualities, both physical and chemical. All agricultural soils are supplied in varying proportions with the necessary plant foods for crop pro duction. Soils that have plant food present in great abundance may be said to be rich. They are not fertile, however, unless these plant foods are in soluble form or unless they are rendered soluble as rapidly as the various materials are required by the plant in the process of growth. The quality of the soil from the standpoint of fertility may be greatly improved by proper cultivation, cr0p rota tion, and the addition of humus, as well as by the application of lime or other material that will improve its physical condition.
