Actualmente se considera imprescindible la intervención educativa para prevenir la enfermedad y mejorar la salud de la población La revisión de programas de educación nutricional en el entorno escolar, demuestra que se puede prevenir la obesidad con una orientación adecuada que favorezca los cambios en la dieta y fomente la actividad física. La elaboración de material didáctico basado en los recursos tecnológicos (TIC) disponibles ayudará a fomentar el aprendizaje de hábitos de vida saludable, estimulará la práctica de actividad física y facilitará la promoción de la salud en la población escolar objeto de este estudio. El presente trabajo se ha diseñado para conocer el nivel de conocimientos básicos de la población escolarizada en un instituto de la provincia de Barcelona, sobre alimentación equilibrada basada en el patrón de la dieta mediterránea y práctica de actividad física, con el propósito de elaborar el material didáctico basado en nuevas tecnologías de la información y comunicación (TIC), que pueda ser utilizado en el aula por los profesores y sirva para ayudar a los alumnos a desarrollar un estilo de vida saludable. El estudio se compone de 4 fases: Fase I: Elaboración del protocolo Elaboración del material educativo para los profesores y alumnos Fase II: análisis descriptivo de la población objeto de estudio. Aspectos nutricionales, condición física-deportiva y medidas antropométricas Fase III: intervenciones educativas teórico-prácticas nutricionales y de actividad física que ayuden a promover hábitos saludables y cambios en los estilos de vida de la población escolar Fase IV: evaluación de los resultados una vez finalizada la intervención educativa.

Book excerpt: El objetivo principal de este trabajo ha sido evaluar los conocimientos iniciales sobre alimentación y los hábitos alimentarios de una muestra de estudiantes universitarios. Dicha muestra fue de 294 alumnos (18-23 años) de la titulación de Magisterio de la Universidad Complutense de Madrid. Todos cursaron la asignatura "La alimentación humana en la escuela" durante los años académicos 2002-07. Los alumnos cumplimentaron un cuestionario de conocimientos y hábitos alimentarios incluyendo la frecuencia de consumo de alimentos, así como un registro dietético semanal estimando las cantidades en peso y raciones estándar. Los alumnos inicialmente tienen imprecisión en muchos conceptos básicos para que puedan brindar una educación alimentaria, pero pasan a obtener mejoras significativas conceptuales con asignaturas del tipo estudiado aunque en determinados casos persisten ideas previas erróneas. Los hábitos alimentarios, al contrario de lo que piensan muchos alumnos, están alejados de una alimentación sana y equilibrada. Se considera clave que los futuros profesores manejen la asociación conceptual "tipo de alimento con su frecuencia y cantidad de consumo, con su nutriente principal en él presente y con su función dietética desempeñada" dado que ésta es la base de saber elegir conscientemente un tipo de alimento u otro (y por tanto también saber sentar principios que sirvan para educar sobre alimentación). Las recomendaciones respecto de los hábitos de alimentación deben basarse en los alimentos y no en los nutrientes, ya que éstos tienen un significado mayor, principalmente social y familiar para los alumnos; además cualquier cambio de hábitos es discreto y sujeto a muchas controversias.
