In diesem Zusammenhang formuliert der Autor fünf Axiome : Wie können wir uns genügend Lebensmittel beschaffen? Wie können wir die Nahrung konservieren und aufbewahren? Wie können wir das Essen ernährungsphysiologisch und geschmacklich verbessern? Wie können wir die Zubereitung der Nahrungsmittel optimieren? Wie können wir deren Sicherheit gewährleisten? Fraglich bleibt, ob Gentechnik allein die Antwort darauf liefern kann. Gentechnik wird in vielen Quellen als Methode der modernen Biotechnologie angepriesen, mittels derer es möglich ist, „gezielt einzelne vorteilhafte Eigenschaften in einen Organismus einzubauen oder eine unerwünschte Eigenschaft daraus zu entfernen.“ Der einzige Unterschied zur traditionellen Züchtung läge darin, so die Befürworter, dass die Änderungen rascher und effizienter herbeigeführt werden könnten. Wäre dem wirklich so, stellt sich eine neue Frage, nämlich die, warum Gentechnik dann noch so umstritten bleibt. 1989 wurden in Deutschland die ersten gentechnisch veränderten Pflanzen (am Max-Planck-Institut in Köln) freigesetzt. Bereits fünf Jahre später wurde in den USA mit der Flavr Savor-Tomate erstmals ein gentechnisch veränderter Organismus als Lebensmittel für die Vermarktung zugelassen. Im März 2000 waren weltweit schon 90 verschiedene gentechnisch veränderte Pflanzen zugelassen, darunter vier transgene Maislinien (Novartis, Aventis, Monsanto, Pioneer), eine transgene Sojabohnenlinie (Monsanto) sowie drei transgene Rapslinien (Aventis). Neben der Optimierung der Anbaueigenschaften ist ein weiteres wichtiges Einsatzgebiet die Produktion von Enzymen, Aroma-, Zusatz- oder Verarbeitungshilfsstoffen durch gentechnisch veränderte Mikroorganismen. In Europa werden derzeit ca. 30 verschiedene Enzyme auf diese Weise gewonnen. Sie finden Einsatz in der Lebensmittelherstellung wie auch in der Futtermittelproduktion. Gentechnisch veränderte Pflanzen dürfen in Zukunft auch zur Herstellung von Impfstoffen, Medikamenten oder z.B. menschlichen Antikörpern benutzt werden.
