Parce que la taille d'hiver représentait le plus gros du travail manuel du vigneron. On y attachait beaucoup d'importance (avec raison) et la qualité esthétique prenait souvent le pas sur la rationalité, car le tailleur était jugé, parfois sévèrement, sur sa façon d'opérer: combien de fois ai-je entendu « aquel pouda ben, aquel autré pouda come un porc! » « un tel taille bien, cet autre taille comme un porc! ». A la faveur du développement, dans le vignoble, de nouvelles variétés, et de l'installation de palissages conséquents, il a fallu, tant bien que mal, réapprendre à tailler, d'autant que la nécessité d'aller toujours plus vite et l'abandon des traitements d'hiver (arsénite de sodium et huiles jaunes) ne laissent plus de place à la fantaisie et à l'esthétisme. Cet ouvrage, qui se veut très pratique ne comporte pas de développements théoriques sur la taille. Il explique comment « bien couper », que ce soit un sarment, une baguette, un courson ou un bras, sans créer de grosses plaies. Il montre, avec beaucoup de dessins et d'illustrations, comment former une vigne en gobelet, en cordon de royat, en guyots divers (simples, double...). Volontairement didactique, il est accessible à tous, y compris aux débutants et aux non-professionnels qui veulent se former à cet exercice. Enfin un chapitre est consacré aux maladies, à leur reconnaissance, et à la façon de protéger les plaies de taille. Bonne taille à tous!"
