With partial and inaccurate knowledge progress may result, but is likely to be halting, limited and misdirected. There are few subjects Which the general public, and those who advise and form public opinion, are so much interested as in that of food. Um fortunately, much of the information Which reaches the public is unbalanced arid unequal in its presentation. The title given to this series of treatises devoted to nonmedicinal therapeutics has been generally adopted as the best and most expressive for the methods discussed. Book excerpt: Excerpt from Food, Its Relation to Health and Disease This subject was never so widely studied and apparently never were there so many peculiar and clashing foodal ideas as now. It is hoped that this publication will throw some light and increase attention on this most important matter. The personal relation of the authors is naturally close; both have labored seriously on this production; but it can be frankly said that the senior could have accomplished the result without the aid of the junior, while said junior alone could not have produced such a result. That many more years of terrestrial activity may be the lot of the senior is the hope of the undersigned. C O'donnell OF the making of books on health, espe cially health books dealing with diet, there is no end. Particularly conspicuous are books on raw food, fasting, and other fads and fash ions. It is the author's Opinion that the gen eral reader lacks both the time and the technical training necessary to conduct experiments upon himself, and that the better way is to choose widely from the vast assortment of foodstuffs which Nature has provided, giving especial heed to heat and energy-producing values, di gestibility, assimilability, therapeutic effects, economy, etc. It is the author's purpose in the present work to afford data upon which to base such a selection, and he is convinced that a treatise of this kind will be found gen erally of greater practical value than one which advocates a rigid restriction of the diet. The books included in the Series present in a useful and handy form the knowledge now available in many branches of the subject. They are written by experts, and the authors are occupied, or have been occupied, either in investigations connected with the various themes or in their application and administration. They include the latest scientific and practical information offered in a manner which is not too technical. The bibliographies contain references to the literature of each subject which will ensure their utility to the specialist. It has been the desire of the editors to arrange that the books should appeal to various classes of readers: and it is hoped that they will be useful to the medical profession at home and abroad, to bacteriologists and laboratory students, to municipal engineers and architects, to medical officers of health and sanitary inspectors and to teachers and administrators. Many of the volumes will contain material which will be suggestive and instructive to members of Public Health and Hygiene Committees; and it is intended that they shall seek to influence the large body of educated and intelligent public opinion interested in the problems of public health. Book excerpt: Excerpt from Food and Fitness, or Diet in Relation to Health TO a large extent health is a matter Of educa tion. I have been engaged for a long series Of years in a study Of the feeding Of the live-stock Of the farm, both on its scientific and practical sides, and I find that the knowledge displayed by owners Of horses, cattle, sheep, swine, and poultry is much more profound than that which applies to themselves. In relation to stock the Object Of the feeder is to provide what will ensure health and a profitable return. He supplies not what an animal would Choose if it could, but what he thinks is the best for his purpose. With regard to himself it is quite the reverse. He consumes not what is the best food for his system, but what pleases his palate, eating as Often and as much as he likes. Argument is futile, demonstration is hopeless, for most people insist that all things are good for their stomachs, or that one man's meat is another man's poison. The number Of deaths, between 60 and 70, Of men who should live many years longer, from diseases attributable to excessive eating, or to eating improper foods, is probably greater than that which is due to the consumption Of alcohol. Thus to abolish flies means not only kill ing all flies, indoors in all houses everywhere. In all stables everywhere, in and around all dwell ings everywhere, but also throughout all fields and forests. Mountains and valleys everywhere. Because flies are hardy outdoor beings as well as indoor beings. They can breed and flourish al most anywhere. Where any kind of food, even in vanishing quantity, is to be had. Book excerpt: Excerpt from The Food Journal, 1871, Vol. 1: A Review of Social and Sanitary Economy, and Monthly Record of Food and Public Health; Containing Numbers 1 to 12 The plan proposed by Mr. Postle, of Sydney, is to stop short of the freezing point, but to keep the air artificially cooled to within one or two degrees above it. This he attains by a very simple applica tion of the laws of heat, in which the air in expanding is made to compress fresh air, so that a large percentage of the power excited in compression, is regained by utilising its expansive force. In practice, Mr. Postle would fit up a ship, holding some thousand carcases, with iron bins, and distribute equally through them cold currents of air, which would return to the machine to be reduced again to the proper temperature.
